Summer Squash Curry Soup
3 or 4 squash, any kind with a yellow tinge, not zucchini if you're going for that lovely golden color.
You don't need to peel them, just cut them into 1-inch bits.
1 yellow onion, diced.
1 clove garlic, minced.
Olive Oil
1 cup heavy cream (or coconut milk if you're vegan)
3-4 cups water (or vegetable stock, which is mostly water anyway -- if you use vegetable stock, omit the extra seasonings of celery seed and Herbs d' Province)
1Tbls curry powder
1/4 tsp celery seed
1/4 tsp HdP
1/2 tsp minced ginger
1/2 cup cashews

Cook the onion in some olive oil in a dutch oven or a large pot, when the onion is translucent, add the garlic and the curry powder and stir (about 30 seconds) then add the chopped squash and cook in the pot with the curry and onion for a few minutes, stirring the whole time.
Then add the cream and water or veg. stock. and the cashews with the other spices if you use them.
When boiling, lower the heat and cook for about 20mins or until the squash is tender.
Use an immersion blender or a reg blender to puree it all.
Re-heat if necessary, and enjoy! WOO!
