After eating light yesterday, I woke up hungry and decided to make my famous Deconstructed BLT Sandwich for brunch.
Bacon, Lettuce, Tomato, and Vidalia Onions on Toasted European Whole Grain Bread with Melted Baby Swiss Cheese and a Baby Cake Potato
I love including as many fresh seasonal vegetables as possible in my recipes. It's an easy way to add healthy nutrients, bonus fiber, as well as attractive garnishes!
Normally I would not have onions on my BLT sandwich; however, the sweet taste of the Vidalia onions that are in season right now enhance everything. Their flavor is so incredibly delicious you seriously can eat bites of this variety of onion by itself!
For those of you who are accustomed to eating a BLT Sandwich in its traditional format, I assembled it for you stacked between two slices of toasted bread.
