Fried Tofu on Rice, Steamed Okra and Corn

A Simple Vegan Meal After A Trip to the Farmer's Market

I went out to go to the farmer's market and got a bunch of fresh vegetables. The cucumbers were green and smelled nice. I also bought some carrots, okra, ampalaya (bitter gourd) and squash. All of them looking delicious and healthy.

I'm fortunate to be living in a rural suburb community where there is an abundance of fresh produce. I'm lucky that I live near a farmer's market and get to pick out the freshest veggies available; everything I need within walking distance.

The corn is not the freshest ones around, but cost me only 10 pesos, roughly US$0.20 cents, so I have nothing to complain about. It came from my favorite store where I get special discounts for everything I buy.

The string beans were nice; I put it in almost everything I cook, whenever it is available.

My favorite firm tofu looked like it just came out of the small shop producing it. It costs around US$0.45 cents when converted to USD.

All in all, I spent a total of 199 pesos, roughly $3.98 US. Not bad at all considering how fresh the vegetables are in this farmer's market.

So, what do I cook for lunch after a trip to the market?

AN AWESOME VEGAN LUNCH

I cooked steamed rice and put in the corn and okra with it in the steamer. Then I sliced two pieces of my fresh farmer's market firm tofu; fried in lauric oil; put in my favorite spices, and, voilà!

Got a cupful of steaming hot steamed rice, put the fried tofu on top and I have a simple and amazing vegan lunch. The corn was under-cooked while the okra was too slimy already for my taste, but I still enjoyed it with gusto.

The okra was delicious dipped in soy sauce and calamansi (or calamondin).

The okra is really good right now, no? It's also in season here in Thailand and turning up in the yummiest veggie dishes ever.

Yes, it is and I love okra, and been having it all week, but at some point I think I need to shift to another veggie to add to my dishes. :)

We don't eat tofu (soy) at all but having LOT of yummy black bean tempeh with mushrooms. And purple sweet potatoes. And dahl. And incredible avocados. Just so good! Feeling very abundant and blessed.

Off to bed - is late here and I have a 5.30am start. 😆
