I've been craving some comfort lately, and today I remembered how much I love aloo jeera and how long it's been since I made it for the family. This dish is super simple, basically just next-level fried potatoes, but don't let that make you think this isn't super delicious.

Toasted Spices Make All The Difference

ย  ย  ย To make this dish extra delicious and smoky, do toast your spices before grinding. It really does make all the difference.

ย  ย  ย The only vegan dish widely available here in Suriname is the "roti vegetarische," a dry roti stuffed with bland dry potatoes and undercooked equally bland longbeans.

ย  ย  ย Nothing compares to the deliciousness of some aloo jeera and a stack of chapatis. I want to be clear though, this is not a health-food dish, this is comfort food. For me, aloo jeera isn't made properly unless there's a tiny pool of bright red oil on the bottom of the dish, perfect for wiping up with the last bits of chapati.

Aloo Jeera Ingredients

Main Ingredients

  • potatoes (boiled, peeled, and chopped) | 4 cups
  • green chilies (slit) | 4x
  • ginger (thin-sliced) | 2 tbsp
  • coriander seeds | 2 tbsp
  • cumin seeds | 1 tbsp
  • paprika | 2 tsp
  • turmeric powder | ยฝ tsp
  • amchoor (mango powder) | 1 tsp
  • salt to taste

Seasoning & Veggies

  • cooking oil | 6 to 7 tbsp
  • cumin seeds | 2 tsp

Whip Out Your Wok (or Kadhai)

ย  ย  ย Grind the cumin and coriander seeds, then combine with the other powdered spices and set aside. Do take the time to dry-roast the cumin and coriander separately before grinding, you will be glad you did it.

ย  ย  ย Heat the oil on a medium-low flame, then add the ginger, green chilies, whole cumin seeds, and fry until fragrant.

ย  ย  ย Now quickly add all the spice powders, reduce the flame a bit, and stir for a few seconds until fragrant.

ย  ย  ย Now add the potatoes and toss until completely coated with the spices. Sautรฉ the potatoes uncovered for about 10 minutes, stirring occasionally. Garnish with some fresh coriander and serve with rice or chapatis.

ย  ย  ย The family was quite excited when they saw I was also preparing fresh chapatis for this meal. There is something so right about this combination. Yes it's oily, but it's the good kind oily, the kind you want to plunge your chapati into.

ย  ย  ย I always try to prepare an amount of aloo jeera and chapatis that I think will be too much to eat, and that is usually the right amount.

ย  ย  ย Monkey-B was most excited for the chapatis because she doesn't like the locally made rotis. It is nice to know that even when given the chance to eat out, our kiddos always choose a home-cooked meal.

Thank you, it is one of my favorite comfort foods, and this dish almost always causes me to take a nap after eating. Sharing the meal with family makes it a little more delicious.

My pleasure, I love making rotis/chapatis, but our kitchen is so small and hot. If I make more than 10 rotis I have to take a shower before the meal.

It is so delicious, but because it can be a little dry, I don't enjoy this dish with rice very much. I think some kind of bread is the best way to enjoy this classic dish. Thanks for stopping by chef.

That is a good combo too, but if I put potatoes and chickpeas together, I prefer with a tomato gravy instead, like aloo channa masala.

Thanks my friend. Well, I can say this dish is just as filling and heavy as fried chicken. Perhaps it is the vegan equivalent of fried chicken, because too much of this dish will mandate a one-hour nap.

This sounds so much better than the stuff you and Monkey-B ate on your recent bicycle trip and that is a huge understatement. How blessed are your children with two great chefs for parents. The veg roti ingredients are the same boring longbeans and potatoes day after day. I don't know why cooks here don't try to reinvent something with flare. Aloo jeera combined with our method of stir-frying longbeans in coconut meat, curry leaves, and mustard seeds, would be a much better filling for a roti, but I think Surinamers are creatures of habit, and they like the food to be predictable just like most Americans.

Aww, thanks my fellow chef. I am honored by your words. The reason I love Indian food other than it's obvious deliciousness, is that it's very regional. Since India is such a large country, I think one can easily spend a lifetime learning different dishes.

I really like the way you present your dish like this before you cook them! Partly the outdoor feel makes it look super natural and refreshing! I'm not exactly sure if I had this before, I don't usually order food at the Indian restaurant, my home minster does. It does looks a lot like the varuval version I usually had here.

Never heard of this dish, but it looks very South Indian. They do appear very similar, perhaps just a North Indian style vs South Indian style thing. I must admit, I cook mostly South Indian foods because they are so full of flavor, but there are certain North Indian dishes that are irresistible even if mildly flavored. I also think North Indian foods are a little more kid-friendly.

Great, I am staring at the above photo having not eaten breakfast yet, need to solve this problem ASAP!
