From Broasted To Poppers: Chicken Pops Recipe

My kids just declared their new "favorite". It is an accidental recipe as I was thinking of a way on how to make them eat the leftover broasted chicken sitting in the fridge. They love broasted chicken but apparently, it has to be from their favorite restaurant. So when I bought a bucket of broasted chicken not from their favorite restaurant, it had gone unnoticed.

There was just a lot of chicken that I cannot afford to eat all by myself or throw away. So how do I "transform" this chicken into something that my children will eat?

Suddenly, I got an idea of making them into chicken pops. I'd turn the chicken meat into small balls and coat it with breading, then fry. I was really optimistic the kids would like this.

So I put out the leftover roasted chicken and started to prep.

It's fairly easy to make this, with almost no flavoring to add because the coating from the broasted chicken will give us all the flavor we will need.

Ingredients:

  • broasted chicken
  • all-purpose flour
  • baking powder
  • egg
  • dash of salt
  • oil for deep frying

Originally, the plan was to mold the chicken meat into small balls then coat them before frying, like you would when making fried chicken. But then I thought, how would I be able to mold the meat when they are shredded into bits?

Change of plan - an easier method:

Just mix all the ingredients together, lump into small balls, then deep fry.

1. Pulse the chicken in the food processor
2. Add the rest of the ingredients.
3. Mix until thoroughly blended.

Scoop the chicken mixture into small balls and deep fry until golden brown.

The New Favorite

"This is my new favorite!"

Okay, so the kids just discovered a new favorite. Hmm, I don't mind. It's not too hard to make. The new challenge would be to make the next ones as tasty as the last if I were to make them from scratch. Hmmm...

Was actually thinking of nuggets too, but forming a ball was easier with the teaspoon. Haha. Yeah, gravy would be great, they dipped these lil goodies on ketchup and mayo-garlic sauce.
