My Dinner Platter for the Night

Today was a luxurious feast for me at least it felt that way as the cook on the side dishes was freaking God-Level and I am not Capping at all. As you can see from the plate I had some Chapatis and also some Pulao Rice and as for the sides I had some fried beans which were simply sauteed in some oil and spices and the main attraction of tonight which was the Dal Paneer for which I can take 90% of the credit as my Mom helped me cut all the veggies and the prep work so yeah my Mom helped me of course.

The Pulao Rice was given to us by our neighbour as they had a Puja Ceremony at their place so it was the prasad for the Puja which in itself was awesome.

I like to cook on a slow flame and take my time cooking but my mom doesn't like that as she is always pressed for time. She wants to get the job done as quickly as possible without compromising any flavours but when it comes to me I like to take things slow and let the flavours seep into all the ingredients. So for this dish I did the same I soaked the lentils in boiling water and let it simmer for like half an hour on a low flame and I added a bunch of spices in that 30 minute time span and kept stirring the pot. Once the consistency looked viscous I added some fried Tofu cubes to the mix and once again let it simmer for 30 minutes on low flame.

And the result was just buttery smooth Tofu Cubes which were simply falling apart by the touch of a finger and all the juicy goodness seeping into them. Damn, I really made something freaking delicious tonight and my Mom agreed with me here. My Mom even shared this with her friends on Whatsapp.

But the sad part is that even though I made a Kadai full of the Dish I could only have a small portion of it as I am on a Diet.
