Salad with Shiitake ___🥗🍄___🤩

Already thousands of years ago the Shiitake mushroom was appreciated in Japan and China for its healing and anti-inflammatory effects... In the past it was even used as a gift for emperors and kings. Reason enough to cultivate these small wonders of nature and of course eat them 😊
The shiitake is used in far Eastern cuisine in many different ways, which is partly due to the typical umami taste - it can be compared with the glutamate used in most ready meals or sachets, except it is natural.

To go with the great weather, there is a fresh lamb's lettuce (not quite seasonal, but I love lamb's lettuce) with homemade croutons, juicy strawberries, a raspberry vinaigrette and of course shiitake from our own breeding.
We cleaned and washed the lamb’s lettuce properly.
We removed the strawberries from the stalk and quartered and of course washed them.
From raspberry vinegar and a good oil, a pinch of salt, pepper and sugar we made a fruity vinaigrette.
The croutons are made from normal toast bread which we have frozen beforehand to make it easier to cut (it is not so flabby and can be much better cut to the desired size and shape). With proper butter – don’t be frugal here - some garlic, rosemary and salt the croutons have taken on a nice golden-brown color on middle heat and under turns in the pan.

The main actor of our salad, our self-bred shiitake mushroom, we fried in a hot pan with butter and herbs (here everybody spices according to his own taste, we kept it simple).
Since mushrooms draw water quickly when cooking, it is advisable to fry them quite hot. Also, for this reason, always season with salt at the end (unless you make a sauce or need the stock - here I like to deglaze with a little cream and let the mushrooms, no matter which - boil down a little).

Last but not least, mix the salad with the vinaigrette and the strawberries. If you like, you can also add grains or nuts of your choice, arrange them on your favorite plate and drape the mushrooms as you like.
And on top of that the croutons and bon appétit!

Bereits vor tausenden von Jahren wurder der Shiitake in Japan und China für seine heilende und entzündungshemmende Wirkung geschätzt... Grund genug dieses, früher sogar als Geschenk für Kaiser und Könige genutzte, kleine Wunder der Natur selbst anzubauen und natürlich zu essen 😊
Der Shiitake wird in der fernöstlichne Küche sehr geren und vielseitig eingesetzt, was unter anderem an der für ihn typischen Geschmacksrichtung umami liegt – verlgeichbar mit dem in den meisten Fertiggerichten oder Tütchen verwendeten Glutamat, nur eben natürlich.

Passend zu dem tollen Wetter gibt es eine frischen Feldsalat ( nicht ganz saisonal, aber ich liebe Feldsalat ) mit hausgemachten Croutons, saftigen Erdbeeren, einer Himbeer -Vinaigrette und natürlich Shiitake aus eigener Aufzucht.

Wir haben den Feldsalat ordentlich geputzt und gewaschen.
Die Erdbeeren vom Strunk entfernt und geviertelt, natürlich auch gewaschen.
Aus Himbeeressig und einem guten Öl, einer Priese Salz, Pfeffer und Zucker eine fruchtige Vinaigrette erstellt.
Die Croutons sind aus normalem Toastbrot welches wir zum einfacherern schneiden vorher eingefroren haben ( somit ist es nicht so wabbelig und lässt sich viel besser auf die gewünschte Größe und Form zurechtscheiden ). Mit ordentlich Butter – hier darf man NICHT sprasam sein – etwas Knoblauch, Rosmarin und Salz haben die Croutons bei mittlerer Hitze und unter Wenden in der Pfanne eine schöne golbraune Farbe angenommen.

Den Hauptdarsteller unseres Salats, unseren selbstgezüchteten Shiitakepilz, haben wir scharf mit Butter und Kräutern ( hier würzt jeder nach seiner Facon, wir haben es einfach gehalten ) angebraten.
Da Pilze beim kochen schnell Wasser ziehen, ist es ratsam sie recht heiß anzubraten. Aus diesem Grund auch mit Salz immer erst zum Schluss würzen ( es sei denn man macht eine Soße oder benötigt den Fond – hier lösche ich gerne mit ein wenig Sahne ab und lass die Pilze, egal welche – ein wenig einkochen ).

Last but not least, den Salat mit der Vinaigrette und den Erdbeeren mischen wer mag kann hier natürlich auch noch Körner oder Nüsse seiner Wahl hinzugeben, auf dem Lieblinsteller anrichten und die Pilze nach belieben drapieren.

I just love this idea for a salad. I have never thought of doing this with shitakes.
