DELICIOUS PAPAYA RECIPE
My parent raised me up in the mountain. After I graduated, I was also employed in a very far mountain where the people living were not yet educated. In one word, indigenous people. They are the real lumad believing the old fashion in life. I was one of the three teachers assigned to that place. We were the first group of an educator who was never afraid of the rebels around. As long as we were doing our job, we believed they would be nice to us. It has been 14 years ago while teaching there.
I'm so proud to myself, the first-ever student who graduated in that school is now a licensed elementary teacher like me. He is now happily teaching the elementary grade.
He became my working student and the eldest son among his many siblings. When he graduated from high school, he needs to study in college in the city. With his willingness to finish the study, I allow him to stayed at my home in the city together with my nephew who was alone at home. I just went home every weekend or twice a month. Until he graduated.
While staying at my home in the city, he planted a papaya tree and it's bearing a lot of fruits until now.
During this pandemic time, the papaya tree gave us daily sustenance and I would like to let you know to plant this kind of papaya. It is really sustainable.
When it rules, we eat sweet papaya but we made something different today
What we did?
It's cooking time for lunch or dinner!
Preparation
My driver and my working student is a good chef. He will be our next educator or a journalist someday. I let him know how to be creative even just in preparing the spices and any stuff needed.
The main ingredient is papaya from our own plant, and mix with the pandemic give away sardines in town.
Saute the garlic and ginger until golden brown to be able to have a great aroma.
Add the sardine to the sauteed spices.
Add on the sliced papaya and cover for 5 to 10 minutes.
Spinach leaves or alugbati is a must for very delicious aftermath.
Simply adding it to the cooked papaya and after 1 minute, it will be finely done.
This is the finished product and you would really appreciate the aroma of healthy food.
Done!
This is the fruit of my profession. I taught my student to study well, he helped me plant some vegetables and trees at my own home in the city. We both harvest the good fruit. If they learned from me, I also learned the basics of farming. I taught them to be creative in so many ways.
I have so much creativity/creation to share with you. And I hope I could have enough time for this blogging.

i used to live in the forest too and i love the life there as i am more closed with nature and less with people, we planted papaya too but known as pawpaw here.. never knew it canbe used to make a dish like this one you explained in your post, might give it a try..

Hmm.. I missed eating this kind of food.. when I was a kid my mother used to cook this recipe, especially in the times that we're lacking of budget.. thanks to this, it's nice to reminisce good old days ^^
