Making Vegetable Soup for Lunch. (Recipe and Heath benefits)

Hello friends, trust you're all doing good. So I decided to make Vegetable Soup(Fluted Pumpkin) for lunch today. Its been quite a long while I made a food recipe post and I'm glad I'm back today to teach y'all how to make a typical Nigerian Vegetable meal. So the vegetable Leaf I used is the Fluted pumpkin.

Fluted pumpkin is a Greenish vegetable Leaf mostly grown across Nigeria and other African countries. Its common known for its rich nutritious benefits and in most cases can be consumed cooked, boiled or raw by simply squeezing the vegetable juice out.
It is called sokoyokotor in Yoruba, Ugu in Igbo, kabewa in Hausa, and Nkong-Ubong in Efik. It contains, vitamins c, a, b2 and E, calcium, iron and potassium.
I started the food journey by visiting the market to purchase few items :

REQUIRED INGREDIENTS :
Vegetable leaf
Water leaf(Talinum fruticosum)
Onions
Pepper
Crayfish
Salt
Maggi
Red oil
Beef
Stock fish
Cow skin

Yeah! the washing and cutting process happens to be the first stage we start with.
You start by intensively washing your vegetables and water leaf to remove the impurities in them after that, you begin slicing :

Here's the sliced vegetable, water leaf and red oil:

Washing the pepper :

After washing you blend the pepper :

After that you prepare your meat by simply washing and cutting them into your preferred sizes :
Washed Beef Meat :

Washing the cow skin :

Washing the stock fish :

After the washing of the meat you gather them all into a pot add onnion, pepper, maggi, salt and start steaming without water for few minutes in order for the ingredients to penetrate into the meat well:

Then after few minutes you add water and boil for some time till it gets soft.

Here's the blended crayfish :

This is where our soup cooking process officially begin, we start by cooking the water leaf together with the boiled meat for some time then you add small quantity salt and maggi to it due to the fact you added it already while seasoning your meat:

Thereafter, you add your vegetable leaf :

After that you add oil and stir for even mixture :

Add your crayfish :

Cook for 4-5minutes :

You might want to increase the intensity of your cooking gas :

Here you go your delicious vegetable meal is ready for consumption :

I made garri paste. In order to make garri paste just boil water and after boil, add some raw garri to your hot water and stir continuously :

What does garri taste like? I have never heard of it before.

It tastes so nice and yummy 😋. It can be sipped or molded to be taken with soup. Trust me, you might want to visit Nigeria to have a taste 😊😂

Are you familiar with cassava @tarazkp? That is what it is. Cassava tubers ground up. (not to be confused with cassava flour) Although I have had it only once or twice, it has a sort of sour taste to it, although not distasteful.

You've just said it all😊. Not all garri are sour though, it depends on cassava tuber specie and the preparation process.
