CLEAR THE PANTRY DAY | VEGETARIAN KANGKONG EGG NOODLES

Hello Hiveans! I hope all of you are doing well and keeping healthy these days.

It was a rainy Saturday so I did not go out for my market day walk and decided to just cook the available ingredients that I have in my kitchen. I've had a few successfully delicious dishes with these clear-the-pantry cooking experiments and a couple of average ones, but all-in-all they're fun to do. So, here I am cooking up a meal with the following ingredients:

INGREDIENTS
Kangkong (1 bunch)
Green Chili (2 pieces)
Black Beans (1/4 can)
Green Peas (1 can)
Maggi Soy Sauce Calamansi Flavor (to taste)
Egg Noodles (1/3 pack)
Bay Leaf (2 pieces)
Tofu (2 slices)
Black Pepper (to taste)
Spanish Paprika (to taste)
Mushroom Powder (to taste)
Coconut Oil (4 tablespoons)
Button Mushrooms (1 pack)
Calamansi (2 pieces)
Water (1 1/2 cups)

PROCEDURE
1.Clean and chop ingredients to bite-sized pieces.
2.Heat oil in a wok on low fire then add the diced tofu. Add a dash of salt and pepper and cook for a few minutes.
3.Add bay leaves, black beans and season with Spanish Paprika and sugar.
4.Add in the button mushrooms and green chili after 5 minutes.
5.Put in the chopped Kangkong stems and cover for 5 minutes.
6.Add in the green peas and Kangkong leaves and cover for another 5 minutes.
7.Pour in water and cover for one minute, then add in the egg noodles. Cover.
8.Add in sauce (2 tablespoons flour dissolved in 1/2 cup water with mushroom powder, salt and pepper). Cover.
9.Cook for a few minutes and serve hot!

For me, the key is to get as much flavor to the tofu as early as possible because it isn't the most savory of ingredients. :)

Well, this one wasn't really a masterpiece. The kangkong was under-cooked and it could have been much better if I had put in more water, but it was good enough for a noodle brunch on an overcast day.

CONCLUSION
I made a quick stop in a nearby 7-11 store on my way to meet up with a friend and was happy to see a CBTL (Coffee Bean & Tea Leaf) 3-in-1 Ready Coffee sachet, so I got a pack to try out. The CBTL branch at SM Shoemart is still closed and I am missing my favorite Americano.

The coffee was excellent. For an instant #coffee mixture, this one really made my day and was the highlight of this meal. lol
