Soup-er Vegan Friday | On a Saturday Morning :)

It's Friday once again and I'm posting my Thank God It's Friday Foodie Post. Why Friday? Well, why not? It's the end of the work-week for most people, which means having time for the family and, maybe, go out and relax with friends.

With that, another question comes up, why am I posting it on a Saturday? Well, the busyness of life got me working till late last night so, I was too tired to finish my post. I'm happy I have other things going on, but I do love my HIVE family, so here goes. :)

For today's post, I decided to make soup to warm up the rainy week that passed here in our area. It's a simple recipe and very easy to cook.

INGREDIENTS
Meat Magic (veggie meat)
Carrots
Sweet Potato
Potato
Green Beans (Chines Long Beans)
Cucumber (on the side)
Bay leaves
Soy Sauce
Cooking Oil
Water
Salt
Pepper
Sugar
Cayenne
Paprika
Curry Powde
Mushroom Powder

Procedure
1.Wash and cut all the vegetables to the size you want.
2.Heat a pan and put in 1.2 liters of water.
3.Put in all of the vegetables, bay leaves and meat magic in the pan; let it boil, then turn the heat down to medium.
4.After 25 minutes, remove the meat magic and dry it in a paper towel.
5.Check if the vegetables are cooked and add the salt and pepper to your desired taste.
6.Add some mushroom powder to enhance the taste and bring out that #umami taste.
7.In a separate pan, heat a 3 tablespoons of vegetable oil and put in the meat magic.
8.Add a little salt and pepper to the meat magic as you are frying it.
9.Add a dash of Spanish paprika, curry powder and cayenne to suit your taste. I like it hot so I put in a lot of cayenne! :)
10.Put in two tablespoons of soy sauce and continue to fry.
11.Sprinkle some brown sugar to caramelize the outside.
12.Put steamed rice and thinly sliced cucumber in a bowl, then top it with the fried meat magic.
13.Serve immediately for the best taste.

The cucumber could have been better dipped in some Apple Cider Vinegar, but its already good as is - fresh and crunchy.
