Vegan Liempo Surprise

Good afternoon Hiveans! I recently bought a home-made vegan liempo from my friend and caterer, Ging (Mary Gracery on facebook if ever you are in Metro Manila and want to taste her super delicious creations).

So today, I cooked up a dish featuring her #vegan liempo, which is unbelievable tasty. I used available pantry veggies to complement this meat-substitute and just chill afterwards with some #coffee and good company.

For the veggies, I used squash, pechay, cabbage, tomatoes; all rich in vitamins and minerals.


INGREDIENTS

  • Home-made Vegan Liempo (100 grams)
  • Pechay (3 stems)
  • Cabbage (30 grams)
  • Squash (50 grams)
  • Tomato (1 pc.)
  • Bay leaves (2 pcs.)
  • Vegan Patis (1 tsp.)
  • Salt & Pepper (To taste)
  • Mushroom Powder Seasoning (To taste)
  • Coconut Oil (3 tablespoons)

PROCEDURE

  1. Wash and cut all the ingredients. Set aside.
  2. Heat 3 tablespoons of oil and sautee the tomato for a few seconds and add in the bay leaves.
  3. Add in the sliced vegan liempo and cook for 3 minutes.
  4. Add in the squash and cook for 5 to 7 minutes; stir from time to time.
  5. Dump in the cabbage and cook another 2 minutes.
  6. Put in the pechay. Cook another 2 to 3 minutes.
  7. Add a pinch of salt & pepper. Stir and cover to cook some more.
  8. Add in mushroom powder seasoning and adjust to your taste. You may add some water (optional).
  9. Top on some steamed rice and serve hot!
