My Quick & Easy Version of a Famous Candy Bar | The Terminal April Fool's #FOODIE Contest [ENG/SPAN]

Coming off an unexpected win in the B.I.S.S. Sandwich Contest for March, I'm feeling pretty good right now.

I immediately decided to enter another food challenge. Part of my win was that I get to claim the beautiful personal banner naming me the *Sandwiteer of March, 2021. I now proudly display it as part of my footer on my posts.

So off I went in search of a new food contest. I didn't have to look far as I discovered the Terminal April Fools #Foodie Contest. As a Member of the Terminal, I'm not entering to win any prizes, only to support the Terminal and @wesphilbin.

That's partly true.

I have to admit that I just love contests. I try to stay away from them, but I can't help it.

So, I'm going to throw in a quick sweet snack recipe I just found last week. Recently, a family member brought me some roasted peanuts from a market. I love nuts, especially peanuts, pecans, and walnuts.

The recipe comes from the best site to locate free recipes for public use, COOKS.COM.

Here is their recipe for Coconut Brittle. Because it reminds me of the candy bar, Pay Day, I loved growing up, I'm going to call it:

I renamed it since after testing out the ingredients today, I want to permanently add it to my recipe collection and add additional ingredients and perhaps different type of nuts in the future.

Let's get started with my sweets Terminal April Fools Foodie Contest recipe. The recipe didn't tell me to pull out my candy thermometer.

However, seeing that this is an April Fool's recipe, I thought maybe to use some common sense when the recipe called for cooking to a temperature of 300deg.

Just thought I'd mention that.

Le he cambiado el nombre ya que después de probar los ingredientes hoy, quiero añadirlo permanentemente a mi colección de recetas y añadir ingredientes adicionales y quizás otro tipo de frutos secos en el futuro.

Empecemos con mi receta del concurso de dulces April Fools Foodie Contest. La receta no me decía que sacara mi termómetro de caramelos.

Sin embargo, viendo que se trata de una receta del April Fool's, pensé que tal vez debía usar algo de sentido común cuando la receta pedía cocinar a una temperatura de 300deg.

Sólo pensé en mencionarlo.

Here are my ingredients:

2 1/2 c. sugar
2/3 c. water
1/3 c. vinegar
1/2 tsp. salt
1 tbsp. butter
1 1/4 c. salted peanuts, roasted
3 c. raw chip coconut

I'm only making a half a batch so I won't waste too much ingredients. If it turns out really good, then I'll try it again soon.

Aquí están mis ingredientes:

2 1/2 c. de azúcar
2/3 c. de agua
1/3 c. de vinagre
1/2 cucharadita de sal
1 cucharada de mantequilla
1 1/4 c. de cacahuetes salados, tostados
3 c. de coco crudo en trozos

Sólo voy a hacer media tanda para no desperdiciar demasiados ingredientes. Si sale muy bueno, entonces lo volveré a probar pronto.

Assembly is easy. First, grab the sugar, water, and vinegar.

Combine in a heavy sauce pan. Stir until smooth.

El montaje es fácil. En primer lugar, coge el azúcar, el agua y el vinagre.

Combine en una cacerola pesada. Revuelva hasta que esté suave.

Next, cook, stirring constantly until candy thermometer reaches 300 deg.

Don't overcook.

Quickly remove from stove.

A continuación, cocine, removiendo constantemente hasta que el termómetro de caramelo alcance los 300 grados.

No cocine demasiado.

Immediately stir in butter and salt until well blended.

This is where I diverted from the recipe.

I added 1 tsp. vanilla. I would have thought the recipe included this to give the flavor some richness.

However, I used clear vanilla.

Next time, I'll use regular vanilla to give the color a deeper brown candy look.

Inmediatamente después, añada la mantequilla y la sal hasta que estén bien mezcladas.

Aquí es donde me desvié de la receta.

Añadí 1 cucharadita de vainilla. Me pareció que la receta incluía esto para darle un poco de riqueza al sabor.

Sin embargo, utilicé vainilla clara. La próxima vez, utilizaré vainilla normal para dar al color un aspecto de caramelo marrón más intenso.

Quickly stir in peanuts and coconut until well blended.

COOLING PROCESS

Immediately spread out the mixture as thin as you can in a well-greased pan.
Let cool for an hour.
Finally, cut into bite-sized pieces.

Extienda inmediatamente la mezcla tan fina como pueda en un molde bien engrasado.
Deje que se enfríe durante una hora.
Por último, cortar en trozos del tamaño de un bocado.

I feel so bad for my image below because my hubby came behind me and cut a huge chunk out before the mixture cooled and I had a chance to take a photo.

I'm Finished!

Finally, my Peanut/Coconut Brittle cooled to the point I could cut it in squares. Since I only made half the recipe amount, my batch of candy was small.

But now I know what I will do different next time.

Finalmente, mi Peanut/Coconut Brittle se enfrió hasta el punto de poder cortarlo en cuadrados. Como sólo hice la mitad de la cantidad de la receta, mi lote de dulces fue pequeño.

Pero ahora sé lo que haré diferente la próxima vez.

I've never tried peanut brittle with coconut. Interesting! That really looks so glossy and brittle. I can almost hear the crunch. ☺️

Hello. Thanks for stopping by. Not entering the contest. Just wanted to show my new recipe for the roasted peanuts given to me by a family member and support the Terminal's contest. Remember when we joined in the Redfish Rally challenges sometimes just to show them how to create certain type of content posts.

Your Peanut/Coconut Brittle looks yummy. I like nuts too and I can see the process looks quite straightforward. I'm staying away from peanuts for a while so I may not try this any time soon but I'll bookmark this post. Well done! 🙂

I'm going to try it with Walnuts and Pecans next time because those are my two favorite nuts.
