Recipes on how to cook fresh tomatoes stew with rice.

Thinking about what to prepare before leaving for church? Or when you're back from church? Or you have visitors coming around and you don't know what to prepare?

Worry no more I've got recipes that you can use in preparing stew and rice with fresh tomatoes and not the sachet or tin tomatoes.

I know many do not know how to go about stew with fresh tomatoes but I'm here to help with my recipes. Before now, I've always wanted to learn and know how to prepare stew with fresh tomatoes but I couldn't. Few days ago, I asked a colleague of mine and she told me, so I tried it and boom it was amazing.

Firstly, let's look at the ingredients and their measurements

  • Fresh tomatoes of about 300 naira
  • Groundnut Oil - 3 sachets
  • Meat of 500 naira
  • Pepper of 100 naira
  • Onions of 50 naira
  • Fish of 300
  • Maggi - 6 cubes
  • Salt
  • Rice - 5 cups
  • Spices e.g Spice city, Nutmeg, Curry, Ginger and garlic, Onga or you can get mixed spices, it's preferable and cost less.

My recipes👇
Parboil the rice and wash it very well. After that, add a small amount of salt and cook it properly until it's soft and the water might have dried off.

While that is on fire, wash your meat, fish, onions and pepper and steam it putting the right ingredients depending on how much he fish and meat are.

Immediately, after that, wash your fresh tomatoes and first of all pick one after the other and divide into four part and slice it.

By this time, your rice must have been done. So you put down the pot and steam your fish and meat on fire.

While that is on fire, continue with the fresh tomatoes. After slicing it, get a grinder and grind them little by little adding pepper to it till you've grinded them all.

The meat and fish steaming must have been done by now, so you put it down. Take another pot and turn in the fresh tomatoes you grinded and stir on fire till the water has completely dried off.

Place another pot on fire and when the water has dried off, pour in your groundnut Oil and when it's hot, add a little salt and onions.

Turn it for about 5 minutes and then add the fresh tomatoes and turn. Allow it to stir for 7-10 minutes. Add all spices you have, pepper and Maggi and salt if needed.

Turn it and then pour in the meat and fish and carefully turn it till you get your desired taste. That's all. Just scoop your rice and add your sumptuous stew and enjoy 🤙🤙🤙.
