Healthy cabbage soup - according to my grandmother's recipe

Dear vegetable lovers, here is a soup with vegetables, and the main ingredient is cabbage, which was prepared by my grandmother and now I am also preparing it.

It may sound too simple and cheap, but it is true that cabbage is a real treasure trove of vitamins and minerals.

This well-known plant is available in almost all stores throughout the year and is also prepared in various ways, we can cook it and eat it as a salad, stuff its large sour leaves, fry it in any case, the preparation variants are different, a matter of taste.

Today, I decided on a light vegetable soup, whose main ingredient is cabbage, which is a real hit for summer days, because all vegetables are young, so fresh from my garden.

INGREDIENTS:

  • 1 small head of cabbage
  • 1 large onion
  • 1 large carrot
  • 2 to 3 potatoes (depending on how big they are, if they are big enough 2)
  • 1 tablespoon flour
  • 1 teaspoon red ground sweet pepper
  • salt
  • pepper
  • spoon of vegeta
  • tomato juice

Chop the cabbage into slightly larger pieces, then add a little salt and process it by hand and let it stand and release the excess water.

While the pile is standing, chop the onion into small cubes and the carrot into rings.

We put a little oil in a certain bowl, which we will heat up a little, then we add onion and stew it.

When the onion has simmered a bit, add the carrot and simmer a little more together at a low temperature.

When everything is a little simmered, add a spoonful of flour and a spoonful of red ground sweet paprika, stir well so that no lumps remain, then pour water.

Bring to a boil, when it boils add and cook until the cabbage is soft.

when it seems to you that the cabbage has softened a bit, add diced potatoes and season as desired.

When the potatoes are cooked, then at the very end, acidify the soup as desired, adding tomato juice.
