Cooking Stinky Bean Paste During Stay at Home Day
Hello, I would like to share about cooking sambal or condiment for my our family breakfast. Sambal is a well known traditional condiment in Indonesia. It's a condiment that contain a mixture of chili, tomatoes, shrimp paste, and lime. We also add a kind of bean which locally called petai or in English it's called stinky bean. It's called stinky bean because it is very stinky (in a good way😁 )
Sambal petai or stinky bean condiment.
We went to a local shop nearby our home in the morning. We bought few kind of vegetables and spices.

We also bought some banana flowers. We planned to make banana flowers curry or soup, but since they were quite small we just steamed them. So, we had steamed banana flowers with sambal petai as the condiment.
We cleaned the banana flowers, took out the old petals, and rinse them in clean water. Next we steamed it.
Okay, now let's get back to the sambal petai. We prepared all the ingredients: the chili, stinky bean, and tomatoes. We made sure washed all the ingredients. We cut each of the stinky bean in half. It's already stinky when we cut it. Surprisingly, it's favorite of many Indonesians.
First, we fried the chili and the shrimp paste together. After few minutes, we took them away and we grind them in pestle and mortar.

On the mean time, we also fried the tomatoes.
The tomatoes were cut and fried in palm oil.
After few minutes, the tomatoes cook and disolved.
We put in all the stinky beans to mix with the fried tomatoes.
We put the chili we fried and grinded before, with the tomatoes.
We also add a litle bit salt and sugar to the mix.
And here is the ready to be serve sambal petai.
People can eat this as condiment when eating rice or vegatables or even meat such as fried chicken.
Sometimes when we don't have any side dish, just sambal and rice is fine. Today, we tried the steamed banana flowers with the sambal petai. The banana flowers did not really taste like anything, but the sambal made it really tasty.
Thanks.
