What to do with leftover veggies after making a stock?

I love getting questions from friends. It’s my favorite way to come up with new ideas for posts. My friend Susan asked what to do with the leftover veggies once you’ve simmered them to get all the vitamins and nutrients out.

Before you trash the leftover vegetable skins and pulp try one of these ideas for putting them to good use.

  • Throw them in your compost bin. They will be great for your garden.
  • Puree the leftover vegetables and use them in any number of recipes. You can add them to soups or stews for extra fiber, thickening and taste. Stuff them into peppers with cheese, sea salt & pepper. Mix them into your sauce for vegetable spaghetti or even better vegetable lasagna. The possibilities are endless.
  • Puree them and make them into veggie burgers by adding eggs, flour, bread crumbs, and some seasonings.
  • Freeze them, date the bags and save them until a need or great recipe idea strikes!

A very good question and some great ideas as answers too!

Although I don't make veggie stock- ever really, but next time I do, I'll know what to do with the leftovers thanks to you!
