Beef stew with rice
Juicy beef cooked with carrots, onion and spices...
served on top of boiled rice...
and some grated cheese for extra flavor.
Oh, and don't forget the salad! Cauliflower with lots of fresh lemon juice from our lemon tree in @trumpman's village!
If that's not a healthy meal, then what is?

Rice made of cauliflower and mushroom stew ... that would be healthy...
oh, and nutritional yeast instead of cheese...
not always! i used to be strict vegan and raw for years...
but there comes a period when your body needs animal fats and popular flavors...
well you can satisfy your soul with a lot of super foods and trendy stuff, but it is a lot more expensive and... let's not say to 'fake it'
nutritional yeast is not a miracle & you can never make real rice from cauliflower...it only looks similar (imagine you can make it also look like cheese on a picture) ;)
sharing from personal experience & taste
yes i've even made naturally fermented nut cheese (from cashew is especially yum)...but it takes much more time&energy just to fake the mind...NOW i prefer to eat them raw or at least activate them in water to break down the proteins before consuming...ALSO baked nuts are not so bad and a lot tastier when seasoned ;)
Not only healthy but looks delicious... especially with local bio lemons! :)
I love Greek lemons from the gardens there! Nearest best lemon around here...
You seem to be very caring and a good cook! :)
The food looks delicious. And I love those plates!
