Piroski (savory donuts)

One delicious, yet not so healthy, recipe we love in my family is piroski pies. They are basically some kind of donuts with savory filling of your liking.

The recipe for the dough is simple:

  • 1 packet of dry yeast (9 grams)
  • 1 glass of lukewarm water (300 ml)
  • 1 tablespoon of sugar
  • 1/3 of a glass olive oil
  • a pinch of salt
  • 3 or 4 tablespoons of cornstarch
  • all purpose flour as much as it takes to have a soft, non-sticky dough

You need to mix the first 3 ingredients together and then start adding the rest. Go easy on the flour, you don't want to have a dough that's too hard, it must be "fluffy". Let it rest in a warm place for at least half to one hour. That's enough for you to prepare your filling.

I made 23 piroski with this recipe. What's inside? Potato filling made with boiled potatoes which I mashed and sautéed with one dry and one green onion, salt pepper, oregano, dry peppermint and dill.

Fry in hot vegetable oil (I used sunflower oil here)...

They cook quickly, so be careful not to burn them. Once they get golden on one side, flip them over. Put them on lots of kitchen paper to soak up any excess oil and you're ready to enjoy them!

Fluffy dough, crispy on the outside and with a soft, aromatic filling on the inside. Certainly not a treat to have every day, but something you can indulge yourself in a couple of times a year...
