Ancient Thai Glass Noodles Spicy Salad - Yum Woon Sen Bo Ran 🇹🇭

Yum means delicious in English and it means mix with spicy dressing salad in Thai words. 😄
🇹🇭 So today I’m going to share with you guys how to make one of commonly dish for Thai people and its call Yum Woon Sen Bo Ran - Ancient Thai Glass Noodles Spicy Salad.
Yum can be cooked with various type of ingredients and each type of yum had their own characteristic and also different name following the main ingredients. 😀
🇹🇭 Yum means Mixed while Woon Sen is to Glass Noodles and Bo Ran refers to Ancients in Thai word.
Yum Woon Sen Bo Ran is really rare and hard to find in the restaurant and only cooking in the household in these day as trendy old style home cooking.
In Thailand glass noodles are made from mung bean which is high in protein and low in calorie that is also very light carbohydrate and perfectly right choice for a person who concern about healthy diet. 😄
There are a few things that differ from the basic yum. It's a plate of fresh glass noodles mixed with ground pork, minced chicken and shrimp with chops chili, deep fried Thai garlic, deep fried dried shrimp, deep fried dried Thai chili and fried peanut which this is the ancient Thai style salad recipe.
Then also add the tomato, onion, spring onion and Thai coriander as fresh vegetable to lift up the delicious flavor .
And tossed in a spicy Thai dressing which is a commonly combination of fish Sauce, lime Juice, palm sugar and pickled garlic juice.
Yum Woon Sen Bo Ran are sour, salty and little sweet, and fit well for those who love spiciness.
The ingredients are very simple. It's required only a few components and preparation which is totally worth to cook. Such a beautiful dish, right?

For Fresh Vegetables
- 1/2 Onion
- 1 Tomato
- 2 Spring Onion
- 2 Thai Coriander
- 1 Tablespoon Bird Chili
- 3 Tablespoon Thai Jinda Chili
- 200 Gram Fresh Glass Noodles
- 1/3 Cup Ground Pork
- 1/3 Cup Minced Chicken
- 4 Shrimp
- 3 Tablespoon Thai Garlic with skin for aromatic fragrance smell after fried.
- 2 Tablespoon Vegetable Oil
- 1 Tablespoon Dried Shrimp
- 2 Tablespoon Orange Dried Shrimp
- 1 Tablespoon Palm Sugar
- 2 Tablespoon Fish Sauce
- 2 Tablespoon Pickled Garlic Juice
- 2 Tablespoon Lime Juice
- 2 Tablespoon Peanut
- 5 Dried Chili
How to prepare vegetable!
- Slice the tomato to equal size.
Tomato Sliced is ready!
- Let's slice the onion.
The Onion Done!
- Cut the Thai coriander and Spring Onion.
Thai coriander and Spring Onion is Ready!
- Chop the Chili into small size.
The Chili is Done!
- Mash the garlic with skin and chop into small pieces.
Mash Garlic Done!
Fried Garlic Instructions.
- Pour the oil into the hot pan over low heat and drop the garlic and fried them until golden yellow and set aside.
Fried Garlic is Ready!
- Using the same pan with remaining oil and drop the peanut and fried for about 3 minutes over very low heat and put aside.
Here the Fried Peanut
- Drop the re dried chili at the same pan and fried it for 1 minute and put aside.
The Dep Fired Dried Chili is Done!
- Drop the Dried Shrimp into the same and fried it for 1 minute and put aside.
The Dried Shrimp!
Save the remaining oil and set aside.
- Drop the ground pork into the pan and pour a bit water and stirred until the pork cooked then dash a bit fish sauce.
The round Pork is cooked!
- Drop the Minced Chicken into the same pan and dash a bit water and fish sauce then stirred well until chicken cooked.
Put the Minced Chicken aside.
- Pour the water and boiled the shrimp for 1 minute.
The Shrimp is Done!
- Pour the water into the pan and get boiled and blanched the glass noodles for few seconds and rinse it very cold water.
- Pour the oil into the glass noodle and mixed them well.
The Glass Noodles is Ready!
Let's make Salad Dressing!
- Drop the palm sugar and fish sauce then whisk them together until dissolved then add the pickled garlic, lime juice and chili.
Whisk them together.
- Add the glass noodles.
And mix them well.
- Add the ground pork, minced chicken, shrimp, onion, tomato, orange dried shrimp, fried garlic, Thai coriander and spring onion.
Let's the noodles soak up the spicy salad dressing!
Time to Toss!
Toss them quick!
Another Toss!
- Add the peanut, dried shrimp and dried chili.
Put banana leaf over the serving plate and drop the Spicy Salad over it.
Served Yum Woon Sen Bo Ran Immediately!
Yum Woon Sen Bo Ran was so delicious enough to be enjoyed as a main dish.
It is very easy and fresh noodle dish that possible adapted the recipe in any way that you like.
The glass noodles should be silky but not soggy!
It just takes a few step to put together as a beautiful meal for a cozy day.
