MyCalifornia Porterhouse Steak

This meal can be huge even for someone with a very hearty appetite, like me!

A good porterhouse should have a deep, rich color without any gray. The fat should be white and not yellow. Look for good marbling throughout the meat, particularly the loin portion. Don't try to get a bargain on a steak like this. While dry-aged and/or prime grade versions of the porterhouse will be expensive, you can find a good "choice" grade steak that is fresh and very flavorful!

Let's cook one!



Ingredients

  • 1 2”-thick Porterhouse steak, trimmed (about 2 lb.)
  • 1 tablespoon vegetable oil
  • Kosher salt and freshly ground black pepper
  • 3 tablespoons unsalted butter, room temperature

Preparation

  • Let steak sit at room temperature 30 minutes before cooking, which will help it cook quickly and more evenly.
  • Heat a large skillet, preferably cast iron, over medium-high heat, then heat oil in pan until smoking.
  • Season steak very generously with salt and pepper.
  • Cook until a deep brown crust forms on underside (do not turn), about 4 minutes.
  • '


  • When there is a build-up of red liquid on top of the meat, it's time to turn the meat.

  • Top with butter and broil until butter is melted, and steak is medium-rare, 4–6 minutes. Try not to cook the steak beyond medium.

  • Serve steak with buttery pan juices spooned over, if desired!

Sweet potato is a great alternative to Russets and much more nutritious.
Personally, my favorite veggie is Asparagus with a Medium rare prime rib done Chicago Styled.

A good looking meal!!!
I am assuming by the timing that you like a well done steak?
I am more of a "blood gravy" on the plate rare kinda gal (my bad lol)
So would be about 1 min per side - repeated for 4 minutes in total.

Sweet potatoes and beans... AWESOME accompanying partners in crime :)

So... so want them bloody! You must be a true carnivore. The only time I take my steak raw is Steak Tartare! I like mine with lots of anchovies and capers, and usually eat it with a slice of my rustic bread!
Otherwise, I like my steak medium!! This was medium. See... hehehe!

Love the plate!!!!!!! My mom had a set just like it - which, I suppose means I can say that I have a set just like it lol. She got hers from an antique dealer that was a good friend of hers. He always said you would know the more valuable of those collections by the number of men on the bridge and three was apparently the most valuable... well, that's what I recall him saying anyway, lol. Useless info :D

No, that is certainly not useless info!
I have four sets of China, and the Blue Willow is my favorite (all came from my mother, and I bought the casual ones).
There is an old poem that goes:
Two birds flying high,
A Chinese vessel, sailing by.
A bridge with three men, sometimes four,
A willow tree, hanging o're.

I broke one plate, and the replacement was $45!

Now your making me crave steak. I probably need to diversify my meals a bit but I keep getting lazy and getting fast food.

You know that I stack, right @jfang003? So part of living below you means is cooking!
I cook everything. I bring a bagged lunch from home. Once in a while, we eat out, but with the pandemic and all, that is not happening often.
One of the easiest to cook is... STEAK!

My sister cooks. There is always a plate of vegetables, some fish, soup and sometimes, there is always a 'side dish'. Simple fare. We eat to live. 😊

Funny thing tonight; after work, I was thinking I would love a nice steak for dinner tomorrow, so I bought one. Albeit not a porterhouse, it's still a nice cut and will be very yummy I am sure!

I prepare steak often. My freezer has cut-up prime rib, a few porterhouses, and more of the cheaper cuts of New York strip steak. It's my go-to dish. I buy them when on sale!

Looks awesome saver! I like to add a little more butter and garlic + fresh thyme to the pan, and then spoon pan juices over top — I saw a video of a guy doing this and he called it “butterizing” the steak. Awesome!
