Food preference that changed over time 🥑🥕

Making healthy meals can demand effort and time, much more when you include snacks in planning the healthy food you'll eat. Sometimes, I consume snacks that are rich in sugar (cakes, candies, chocolates, and cookies). Those treats are easy to buy in grocery stores, I'll just have a stock and I'm good for a week or month. But since I'm spending more of my time at home, I get to plan and prepare my own snacks too. When work stress is just so real, I even bake my own bread 😂. But I'm still firm on my resolve that I won't go near a working oven this summer. So yesterday, I've made time to prepare a healthy snack for me and my family.

I am not sure what to call this that'll be familiar for some of you, but it's a Filipino version of spring rolls. Once I've tried spring rolls and loved it so much, it's just a little difficult to find it in restaurants here in the Philippines. Lumpiang gulay is a famous snack in our country, it's made of sautéed mix vegetables, rolled in thin wrappers, and fried until it turns golden brown. The vegetables you put as filling can vary depending on your liking or to the availability of the vegetables you have 😂. For this, I used the following...

Sautéed filling :
  • 1 medium singkamas (Jicama)
  • 1 medium sayote (Chayote)
  • 2 small carrots
  • 1 medium potato
  • 2 blocks of tofu
After preparing the filling, I carefully wrapped it in lumpia wrappers. It's a cheap but very healthy snack, well, aside from the use of vegetable oil. For someone like me who barely eat vegetables when I was young, this snack that I enjoy is something I'm proud to label as healthy. To many, it's best paired with vinegar, but I'm already okay just eating these without any dip or sauce.

I was still hesitant to make this even though I have already prepared all the ingredients. I'm not really a fan of avocados but it's about to go bad and I don't like wasting food. The last time I tried eating avocados was more than a decade ago, even though I was curious of the avocado toast sandwich breakfast that I see on menus and ads, I still can't forget how I didn't like the taste of it when I was a kid.

Ingredients :
  • 3 medium avocados
  • 2 tbsp all-purpose cream
  • 1/4 cup evaporate milk
  • 1/3 cup condensed milk
  • 1 cup crushed ice
While making all these, after having a taste of everything, it came to me that my preference in food has changed. It's not just because it's healthy but it's very delicious for me now. At that time, I was thinking of the food that I have tried in the past years that I disliked so much. Maybe I should give it another try and should not miss how delicious those things are.
