[ESP-ENG] LA COCINA DE ZENAI PRESENTA: PABELLON A CABALLO / PABELLON A CABALLO
Happy and blessed afternoon, my cooking friends, in this opportunity I want to share with you our lunch today: A delicious Pabellon on horseback.
Para realizar este plato necesitamos los siguientes ingredientes:
½ kilo de carne de res (falda)
½ Kilo de Caraotas negras
Arroz
½ pimentón
Ajo
Ajíes dulces
1 cebolla
1tomate
Ajo Porro
1 ramito de cilantro
Una pizca de pimienta
Una pizca de comino
Aceite
Sal
Pimienta
Comino
Arroz
Plátano
Huevo
To make this dish we need the following ingredients
½ kilo of beef (skirt steak)
½ kilo of black beans
Rice
½ paprika
Garlic
Sweet peppers
1 onion
1 tomato
Garlic Porro
1 sprig of cilantro
Pinch of pepper
Pinch of cumin
Oil
Salt
Pepper
Cumin
Rice
Plantain

Preparación de las Caraotas / Preparation of the Caraotas
Escogemos y lavamos las caraotas Desechamos todas las que floten en el agua.
We choose and wash the beans. We discard all the ones that float in the water.
Then we put them in a pot with water and cook them over high heat until they boil. Then, lower the flame, add a piece of onion and a chili pepper and let them cook for about an hour until the beans are soft.
Wash and cut the meat and beans (onion, paprika, chili peppers, tomato, garlic and cilantro). Peel the garlic)
Once the grains have softened, add salt, pepper and cumin.
Colocamos un sarten a fuego lento y añadimos aceite los ajos, la cebolla , los ajies, el pimenton.
Place a frying pan over low heat and add oil, garlic, onion, peppers and paprika.
Then add the sofrito to the beans and cook for 10 more minutes or until the desired thickness is reached.
Heat 2 tablespoons of oil in a pot. Add the garlic, the onion, the paprika and then add the cup of rice, stirring it so that it is impregnated with the oil and the seasoning.
Add two cups of water to the rice and leave until it begins to dry. Lower the flame, cover until it dries and turn off the fire.

Wash and cut the meat, then place it in a pot with enough water and cook until tender.
Once the meat is soft, remove it from the fire and let it cool and then shred the meat into thin strands.
Heat the oil in a frying pan and add the garlic. We brown them, without burning and add the onion, the paprika and the sweet peppers. Cook over low heat.
Add the tomatoes, salt, pepper and cumin. Then add the meat, fry a little and finally, add a little of the broth where the meat was cooked. Cook over low heat, stir well. Let it dry until the meat is ready.
- Cortar los plátanos en tajadas, diagonalmente.
- Calentar el aceite y freír las tajadas, primero por un lado y luego por el otro, hasta que se doren sin que se quemen.
- Retirar las tajadas y colocarlas en papel absorbente para quitar el exceso de grasa
