NIGERIAN LOCAL RICE: My Version | ARROZ LOCAL NIGERIANO: Mi versión {ENG-ESP}

Do you ever feel like cooking a particular food but you don’t have all the ingredients necessary to do so, so you kind of make do with what you have and substitute some ingredients with others that are available? Yeah? That is the basis of today’s dish.

Local rice is a staple in different communities and villages across Nigeria. Each tribe has their unique way of preparing it. Some ingredients are added and removed but all in all, it is relatively the same meal. The term “local” means it varies based on different localities so it is bound to be distinctive.

The first time I came across the dish was at home; my mother made it. I was present with her in the kitchen, observing and helping out. At first I figured we were making jollof rice; the ingredients seemed to match, until I saw her pour some palm oil into the pan. Confusion took over me and I proceeded to ask what exactly we were preparing. She then clarified and said it was Local rice not Jollof rice.

It is not commonly served at outdoor occasions or events so it is not very popular outside of Nigeria. Nevertheless it is an uncomplicated and straightforward dish to make.

Without further ado, let’s get to cooking.

INGREDIENTS

  • 2-3 table spoons of palm oil
  • 2 bulbs of onions
  • 5 tomatoes
  • 3- 5 pieces of Pepper (depends on your tolerance level)
  • 1 sachet of Tomato paste (optional)
  • 3 cups of Rice
  • 2 pieces of dried fish
  • 1 teaspoon of Curry seasoning
  • 2 pieces of Seasoning cubes or packets
  • 1 teaspoon of Salt
  • 1 teaspoon of dried pepper (optional)

PROCEDURES

1 Prepare your ingredients

  • Wash and dice your tomatoes, pepper and onions; slice some onions into rings.


  • Soak your dried fish in hot water for 5-7 minutes to soften it.


  • After soaking, dip it in some warm water, then wash and debone.


  • Parboil your rice for till it bubbles then take it down and wash and keep.

2 Start proper cooking

  • Pour 3 table spoons of palm oil in to your hot pot.


  • Sprinkle in your diced onions and stir for 2 minutes.


  • Add your sliced pepper, stir for 2 minutes.


  • Add your tomato paste, stir for 3 minutes.


  • Pour in your chopped tomatoes and stir, leave to cook on low heat till it dries a little.


  • Add in 2-3 seasoning cubes, or 2 packets of seasoning powder, and some salt and pepper. Taste it ascertain the level of seasoning.

  • Add 2 cups of water and bring to a boil.


  • Then add in your washed parboiled rice into the mix, stir gently and leave to cook for 20 minutes. (The time depends on the kind of rice, once the rice is soft and edible, bring it down). Also add in your dried fish.


  • When the rice is fully cooked, add your sliced onion rings, stir gently and thoroughly, and then bring down.

And there you have it, A Delicious Hot Plate of Local Rice.

DISEÑADO CON CANVA

El arroz local es un alimento básico en las distintas comunidades y aldeas de Nigeria. Cada tribu tiene su propia forma de prepararlo. Se añaden y quitan algunos ingredientes pero, en general, es relativamente la misma comida. El término "local" significa que varía en función de las distintas localidades, por lo que está destinado a ser distintivo.

La primera vez que vi este plato fue en casa, lo hacía mi madre. Yo estaba con ella en la cocina, observando y ayudando. Al principio pensé que estábamos haciendo arroz jollof; los ingredientes parecían coincidir, hasta que la vi echar aceite de palma en la sartén. La confusión se apoderó de mí y le pregunté qué estábamos preparando exactamente. Me aclaró que era arroz local, no arroz jollof.

No suele servirse en ocasiones o eventos al aire libre, por lo que no es muy popular fuera de Nigeria. Sin embargo, es un plato sencillo y fácil de preparar.

Sin más preámbulos, pongámonos a cocinar.

INGREDIENTES

  • 2-3 cucharadas soperas de aceite de palma

  • 2 bulbos de cebolla

  • 5 tomates

  • 3- 5 trozos de Pimiento(depende de tu nivel de tolerancia)

  • 1 sobre de pasta de tomate (opcional)

  • 3 tazas de arroz

  • 2 trozos de pescado seco

  • 1 cucharadita de condimento de curry

  • 2 cubitos o sobres de condimento

  • 1 cucharadita de sal

  • 1 cucharadita de pimienta seca (opcional)

PROCEDIMIENTOS
1 Prepare los ingredientes

  • Lava y corta en dados los tomates, el pimiento y las cebollas; corta algunas cebollas en aros.


  • Remoja el pescado seco en agua caliente durante 5-7 minutos para ablandarlo.


  • Después de remojarlo, sumérgelo en agua caliente, lávalo y deshuésalo.


  • Hierve el arroz hasta que burbujee, retíralo, lávalo y guárdalo.

2 Empezar la cocción

  • Vierte 3 cucharadas de aceite de palma en la olla caliente.


  • Añade la cebolla picada y remueve durante 2 minutos,


  • Añade el pimiento en rodajas y remueve durante 2 minutos.


  • Añade la pasta de tomate y remueve durante 3 minutos.


  • Añade los tomates picados y remueve, deja cocer a fuego lento hasta que se seque un poco.


  • Añade 2-3 cubitos de condimento, o 2 paquetes de condimento en polvo, y un poco de sal y pimienta. Pruébalo para comprobar el nivel de condimento.

  • Añadir 2 tazas de agua y llevar a ebullición.


  • A continuación, añada el arroz vaporizado lavado a la mezcla, remuévalo suavemente y déjelo cocer durante 20 minutos (el tiempo depende del tipo de arroz; cuando esté blando y comestible, bájelo). Añada también el pescado seco.


  • Cuando el arroz esté completamente cocido, añade los aros de cebolla cortados en rodajas, remueve suavemente y a fondo, y bájalo.

Y ya está, un delicioso plato caliente de arroz local.

that looks good, aye.
I've made Jollof rice a couple of times (but my family don't cope with it being to hot, so I have to dial back on the chilli 🙄).

Fortunately hot chili isn't a key ingredient so you can manipulate the amount that's added to it.

My friend makes it with vegetables too .
If I wanted to add vegetables, I'll prefer to steam it separately and serve it at the side.
