DIY - Green Pea Risotto

This is another very simple recipe you can make at home in half an hour. It's not rocket science, just basic stuff and the outcome is great! I'm making this dish for ages and can never get bored of it. If you're not vegan (I'm not either), scroll don't to see the suggestions.

My intention with these recipes is to show you how easy is to cook a healthy meal at home and to encourage you to try some out.

Ingredients for 4

  • 300g rice,
  • 400g frozen green beans, fresh, or canned,
  • 1 medium onion,
  • 3 tbsp extra virgin olive oil,
  • 2 cloves garlic,
  • salt,
  • red paprika powder,
  • pepper (optional).

Method

Chop the onion, add oil to the pen, add the chopped onions and cook for 3 - 4 minutes while constantly steering.

Use medium heat so you don't burn it.

After three minutes you can add the garlic. That is more sensitive, burns more easily.

Add red paprika powder, salt, pepper and green peas. Add water to cover, cover with a lid and cook for 10 minutes.

Rice

If you're using pre cooked rice, you can add that to the peas. If not, you need to cook the rice first, separately.

Add water, three times the quantity of the peas, salt and cook till it's tender. Then you can add it to the peas. Mix well and serve till it's still warm, although it's heavenly good cold as well.

Suggestions

If you like spices, herbs, you can use some, just make sure you don't exaggerate as the taste of the peas should stand out, not the herbs.
If you're not a vegetarian, you can serve this amazing rizotto with anything you like, sausages, grilled meat, .

It's an easy recipe, ready in 20 - 30 minutes max and you can make it anytime as both frozen and canned green peas are good.

Never thought of that and looks delicious. Definitely, one for me to try :-) We always have loads of rice here lol.
On the subject of rice. I cook a load then throw it in airtight containers and straight into the fridge from the rice cooker until I need it. Much better for fried rice which I often make and also for something like this!
I don't like paprika so I might try it with some red onions or red shallots to give it a little kick!

I know rice is staple food over there. I've never had or thought of freezing rice but it's good to know, in case I have too much.
If you don't like paprika, you can use something else, I bet there are plenty there which we don't have here :)

Nice but over here we use that as a siding and not as a main meal. 😋

i've never tried to make it but by seeing how upset Gordon Ramsay got about risotto in that show Hell's Kitchen I was under the impression that it is quite complicated to get it just perfect.

Perfect is debatable, I'd say perfect is how you like it and let's not forget that's a show and people love drama. I bet nothing is good enough for him and would throw my risotto out of the window.
