My mom's Vendi Bhaji Recipe step-by-step | LOH #306

Hello ladies of hive community, I am going to share a very simple recipe today. This is something my mom makes and I know that it does not need many things to turn out great.
My mom says that this was one of the easiest vegetables to get when she was growing up. Her mom used to make this dish when they had practically nothing. They did not have expensive spices or any other fancy ingredients. They would just use some vendi and the few items that they could find at home easily.
I love simple recipes such as the one today I'll share. With spicy ingredients anything can become the most delicious food.
So, here are the things that we are going to need for this vendi bhaji:
Ingredients:
Vendi (lady finger) 8
Onion 2
Green Chillies 5
Cooking oil
Turmeric powder
Cumin
Garlic 1/2
Red fried chilly 2
Salt
Step 1: Prepare the vendi

First of all, wash the vendi and dry it properly.
It is a good idea to do this step since it will reduce any excess moisture which can make the bhaji more sticky.
Now remove the both ends of the lady finger you don't wanna eat them, hehe🤣. cut them into pieces.
Step 2: Mix ingredients

Make pieces of onion and chillies.
Keep the powders nearby.
Step 3: Heat the oil

Now, we are going to use a pan to heat some oil. Use medium heat for this
Add the oil and let it reach a good temperature. Add fried chilly, garlic, cumin with some garam masala. Cook it for a bit.

Then add the onions and green chilli fry them to let them all together to soften a little
Step 4: Add the vendi

Next, add the chopped vendi and stir well.
Again, stir everything to make sure that all of the ingredients are mixed well.

Add salt as per taste

Next add the turmeric powder.
Step 5: Cook the bhaji

Let the vendi cook on medium heat
Stir it sometimes so it won't stick to the pan as it's very sticky
If it gets dry then add a little water

Take the cover of the pan and put it on the top of it because you need to let it cook for a few minutes. After that uncover it and allow to cook for a while longer until most of the moisture has been lost and the vendi has softened.
Step 6: Wait for it to cook


Do a final stir and let it cook for another minute or two.

When the color changes from green then that is it. The simple vendi bhaji is ready to be enjoyed.


I personally love to have this dish with some hot rice. I think that sometimes the most simple of the vegetable dishes have the best stories behind them. This one, in particular, has a special place in my heart since it reminds me that my mom's can create great meals with just about anything that is found in her kitchen. Also, it's connected to bangladeshi root. Because most of the bengali have this food in their daily meals.

Here they call Okra hehehe I love it we use a lot in Brazilian cooking, we cook with chicken ;)
Lady finger and vendi is all I knew. Okra is new for me and it does sound more tasty, hehe. Never thought how would it taste with the chicken. 🐔 Will not that be sticky?

Hehe, do you like it spicy?
Little spicy is ok but I can't take too much spicy food either.
Little spicy would feel bland to me so as you can see in the picture, there's 2 extra fried chilly 🌶️ as well. I was not used to spicy food before but now my tongue got adjusted lol.
I can eat but I strongly avoid the chilly. It's not that I am afraid of it but I don't feel any taste of it. Old habit and I guess it will never change. But I can understand you as my sister and mother love spicy.

We call that vendi Okra in my country and used to prepare a semi vegetable soup and other recipes. I just bought some yesterday to prepare an Okra soup. You made the steps look so simple, if not for the condiments I am not able to lay my hands on here, i would have tried cooking it.
