No, it's not a rose! It's a vegetable,a kind of radicchio known as The rose of Gorizia in Italy or Solkanski radic in Slovenia. The rosettes are crisp, not bitter and have an excellent taste. In addition to its culinary value, this type of radicchio also has a high esthetic value. As its rosette is similar to a rose but without the scent, it is sometimes used for making bouquets as well as for food. Growing radicchio is very demanding and depends mainly on the weather. Heavy rainfall or drought adversely affect the development of the plant, resulting in very low yields per square metre. that's why a successfully harvested radicchio has a bigger value.
