Tagliatelle with chicken and other goodies

I love pasta

But I'm a bit weird, I love the pasta's usually without the red sauce. Whenever we eat spaghetti, it's spaghetti carbonara for me and the little lady and spaghetti bolognese for the boyfriend. I never really fancied red sauce, and I probably never will. There are a few other pastas that we agree on though, and even the little lady told me yesterday that she likes this one, yay for me!

Pasta memories

This one is actually one of the first pastas I made in my life when my oldest daughter was still a tiny toddler. Her father was actually the one introducing a varient of this one that I made my own over time and has never left the menu here. When the oldest grew a bit older and was about 4 years old, she absolutely adored this pasta and it was her favorite dish. Whenever I asked her what she would want for dinner that day, this pasta would be the chosen one. Of course, this alone is the reason it will never leave my memories and as long as we enjoy it, we will keep eating it from time to time.

It has been ages

Since I had made it until a few weeks ago, I had to be creative because one ingredient was not available and so I changed it and used philidelphia cheese instead of the Lidl herb cheese. We agreed last time that I didn't use enough spinach. I always used frozen spinach but as the fresh baby spinach has been in the house quite often in the past months, I now used the fresh one instead. Just not enough last time, oops. Therefore I did a retry yesterday, and used the whole bag of spinach for a more balanced out meal. Good choice!

Ingredients

  • Tagiatelle
  • 1 chicken filet
  • 300 grams of fresh baby spinach
  • 150 grams of bacon in parts
  • 1 package of philidelphia cream cheese
  • fresh parsley
  • Cashew nuts (I didn't measure it, always add enough!)
  • Pepper (I didn't add salt)
  • A bit of ground garlic

The process

This may be the easiest process ever, put on water for the pasta at the same times as you start preparing the sauce. Bake the chicken cut in cubes first, when they are almost done, I add the bacon, cashew nuts as wel as the fresh spinach. I wait until the spinach is heated before I add the cream cheese and parsley. The reason I don't added the herb philidelpia is because I noticed this one is so much more expensive just for a little bit of herbs which I have available fresh as well. Never buying that again, now that I noticed this.

Back to the process, whenever the spinach is heated, I always add the creem cheese and stir it well. Then I also add a bit of ground garlic and pepper. If you approve of the taste, it's done in a heartbeat!

It really is! It took some time before my youngest accepted it (she simply refuses to taste new things, period, a real pain sometimes!). So it was a huge victory when she said she loves this too! 1-0 for mom!

I used to make too much sauce by adding 2 chicken filets, which is really not needed as we could even refill our plates, so for 2-3 people this is enough and doesn't take much time to make.

Oh I am beyond fond of pasta, and I have to say, that your recipe sounds divine! I mean the cashew addition alone has me intrigued, I've ate lots of Asian noodle dishes with nuts, but this carbonara dream of yours has me slightly drooling. Good thing I have a big ol post of spaghetti squash soup simmering lol lol!

Oh man I also love adding nuts to many things, like in a salad, it's a must! :)

Would you believe I never ate squash? We talked about it yesterday that I should at least try to prep a soup with it once so we can test if we like it. It's on my list :) lol

How are you doing btw? I have been absent more lately, but thankfully a weekend with a car rental ahead so we are out and about for a few days.. Can't wait!
