Recipe: Easy Tomato Tart - Gluten-free & Vegan

What do fresh off the vine, ripe seasonal tomatoes remind you of? For me, it’s sitting in the sun eating whole bowls of them – popping one after the other into my mouth when I was a little girl; I still do this now. It brings back memories of the warming sun, the sweet taste of those plump little morsels and endless summer days.

What a beautiful presentation! I'm calling over @riverflows and @naturalmedicine to enjoy this with me. I didn't look where you are located in the world, but here in my neck of the woods there are some divine vegan butter options now that would probably work perfectly in the crust. Miyoko's is a brand with a cultured vegan butter that tastes just like I remember butter tasting before I went plant-based. I'll definitely have to give this a try soon!
