I bought some saba banana, and I used to fry them with sugar, or fry in butter. At times, I sweetened them with sugar or condensed milk. Thinking of other ways to cook the banana, and thought of turon, or banana wrapped with lumpia wrapper, and fried. However, I don't have lumpia wrapper until I remember making banana fritters or maruya, which I have planned weeks ago.

So I came up with making banana fritters, and it is easy to prepare with few ingredients.

Ingredients:

  • Saba banana
  • Flour
  • Sugar
  • A pinch of salt
  • Butter
  • Cooking oil
  • Cheese (Optional)
  • Raisins (Optional)
  • Muscovado sugar (Optional)
  • Water
  • Egg

Procedure:

  • Slice saba banana in small slices.

  • In a bowl, combine the flour and sugar, add some water and mix them altogether. Add a pinch of salt as well. I didn't include the measurement as you can adjust it for yourself. You can also add baking powder. I didn't add one because it's not available.

  • Bate an egg, and add to the flour mixture.

  • Add the banana in the flour mixture, and mix.

  • This is optional, you can also add raisins, and grate some cheese.

  • Heat the pan, and melt some butter. Add it to the flour mixture.

  • Heat the same pan, pour some cooking oil, and start frying.

  • Once it is golden brown, remove it, and drain excess oils. Fry more of the remaining mixture.

  • After draining the excess oils, arrange in the plate.

  • Sprinkle some muscovado sugar on top. This is optional, and you can sprinkle white sugar. Add some margarine or butter if preferred.

  • Serve!
