Cookies filled with chocolate cake

Cookies are ideal anytime. As snacks for your children, in the mid-morning, mid-afternoon or just when you want to eat something sweet. I've always said that a good cookie makes anyone happy and these chocolate cake filled cookies will make you love them completely.

It is a crunchy cookie on the outside, like a traditional cookie and soft inside like a rich chocolate cake. Let's get to work, find the ingredients, prepare the table, preheat the oven that we are going to bake.

Ingredients

For the vanilla dough

  • 1 egg
  • 80gr of butter
  • 50g of sugar
  • 140g all-purpose flour
  • 1 tablespoon of vanilla essence

For the chocolate dough

  • 100g of dark chocolate or 50g of cocoa powder
  • 1 egg
  • 40gr of butter
  • 60g of sugar
  • 60gr wheat flour with leavening
  • 1 pinch of bicarbonate

Approximately 20 cookies

Preparation

Vanilla dough

  • In a bowl, place the butter and soften. When it is soft enough, add the sugar and mix well.
  • Add the egg and vanilla and integrate very well.
  • Add the flour and mix well. Take this dough to the refrigerator for at least 30 minutes.

Chocolate dough

  • Melt the butter together with the chocolate or cocoa and let it cool down.
  • Mix the egg with the sugar until the volume increases.
  • Add the chocolate mixture and integrate well.
  • Add the flour and baking soda and integrate well.
  • Take this mixture to the refrigerator for at least 1 hour. It will not freeze.

Making the cookies

  • With the dough already resting in the fridge, form at least 20 balls of the same size with both doughs.
  • You will notice that the chocolate mass has more volume than the vanilla mass but don't worry, that's the recipe. The chocolate balls should be larger than the vanilla ones.
  • Once you have all the little balls of each dough, take a vanilla one in the palm of your hand and crush it with your finger as best you can.
  • Take a chocolate ball and place it in the center and cover it with the vanilla dough. Place it on a prepared baking board.
  • Flatten the dough on the tray a little to give it a round shape and repeat the process with all the other vanilla and chocolate balls.
  • Once they are all ready, take them to the preheated oven at 180°C for 25 minutes.
  • Leave to cool before eating and accompany them with whatever you like. You can add glass sugar on top to give them an extra sweet touch.
