Chicken cooked in achiote oil

When we are on a dieta or we are sick, the best meal has to do with chicken. Chicken is the best option for a healthy meal because is lean as long you to take the skin off. Grandmothers used to prepare chicken soups when we had a cold, and they really made us feel well.

Today I am going to prepare a mexican chicken recipe using achiote. Achiote are seeds used to paint food. Mexican prepare a paste with the seeds to prepare what is called cochinita pibil, and they use this paste in many dishes. Achiote is cheaper than saffron.

The achiote seeds have many properties that benefit health. It is good to cure stomach aches, bad digestions, cancer, diabetes etc. That is the reason why mexican use them in many meals. Mexican are long-lived because they eat good food.

Preparation of the achiote oil:

In a small pan place some oil and the seeds and put it on the fire for 2 minutes.

For this dish you need a chicken without skin, achiote seeds, salt, spices like rosemary, oregano and cumin seeds.

Preparation:

  • take the skin off the chicken
  • place it in big pan
  • add salt, the spices and the rosemary
  • finally the achiote oil
  • cook slowly with the lid on for about 30 minutes
  • remove the lid and cook a bit more until it gets golden
