So if you haven’t already noticed, I’m a lover of all things quinoa. And chocolate. It may be hard to believe, but I love them both equally.

Quinoa Chocolate Crepes are a delightful and nutritious twist on traditional crepes. By incorporating quinoa flour into the batter, you get a gluten-free option with added protein and fiber. These crepes are perfect for a breakfast treat or a dessert, filled with your favorite fruits, creams, or spreads. Here's how to make them.

Ingredients:

  • 1/2 cup quinoa flour
  • 1/2 cup all-purpose flour (or gluten-free flour blend)
  • 2 tablespoons cocoa powder
  • 2 tablespoons sugar
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 cup milk (or dairy-free alternative)
  • 1/4 cup water
  • 2 tablespoons melted butter (or coconut oil for a vegan option)
  • 1 teaspoon vanilla extract

For the Filling:

  • 1 cup whipped cream (or coconut whipped cream for vegan)
  • 1 cup fresh berries (like strawberries, raspberries, or blueberries)
  • 1/4 cup chocolate hazelnut spread or melted chocolate (optional)

Instructions:

  1. Make the Crepe Batter: In a large bowl, whisk together the quinoa flour, all-purpose flour, cocoa powder, sugar, and salt. In a separate bowl, whisk the eggs, milk, water, melted butter, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, whisking until smooth. The batter should be thin and pourable. Let it rest for at least 15 minutes.

  2. Prepare the Crepe Pan: Heat a non-stick crepe pan or skillet over medium heat. Lightly grease it with a small amount of butter or oil.

  3. Cook the Crepes: Pour about 1/4 cup of batter onto the pan, tilting it to spread the batter into a thin circle. Cook for 1-2 minutes, or until the edges start to lift and the underside is golden brown. Flip the crepe and cook for another 1-2 minutes on the other side. Transfer to a plate and cover to keep warm. Repeat with the remaining batter.

  4. Assemble the Crepes: Once all the crepes are cooked, you can start filling them. Spread a thin layer of chocolate hazelnut spread or melted chocolate on the crepes (optional). Add a dollop of whipped cream and a handful of fresh berries. Fold or roll the crepes and place them on a serving plate.

  5. Serve: Serve the crepes with additional whipped cream and berries on top, if desired. You can also drizzle with melted chocolate for an extra indulgence.

Quinoa and chocolate!? I might have to try this one.. I'm not even much of a chocolate eater but I certainly love quinoa; and the combination is too weird not to be intrigued
