Have you ever watched 'Doraemon'?

That one cute fat cat from the future. Wait, he's actually from the year 2000's - Yup, the cartoon is that old. Their future is our present these days, yet, we still don't have any cute chubby blue cat that can take us places through his magic door.

Doraemon is a fictional character in the Japanese manga and anime series of the same name. He is a male robotic cat that travels back in time from the 20th century to aid a preteen boy named Nobita. More info on Wikipedia

Doraemon's favorite food

I actually didn't watch much of the cartoon as I found it a bit repetitive. Though, I remember, all he eats is just this pancake-like dessert stuffed with some red bean paste called 'Dorayaki'.

Lately, I have been crazy cooking all this food hacks, and easy recipe. Both because of the COVID-19 and because it's actually just fun to cook and try new things at home so, why not Dorayaki?

What is Dorayaki?

Dorayaki is a type of Japanese confection, a red-bean pancake which consists of two small pancake-like patties a filling of sweet azuki bean paste.

Though, does it have to be just red bean paste stuffing? I don't think so... I think it would also be good with other kinds of bean or even pumpkin or sweet potatoes. It just feels to me that they have the same texture once mashed. Though, I will stick with red bean this time :)

Ingredients

Pancake: Egg, all-purpose-flour, sugar, syrup, milk (water works too), melted butter

Red bean paste: Please see the 2 ingredient recipe from this post

Speaking of the ratio or measurement, I just eyeball them all. At the end, all we need is just that right texture of the pancake mix. Which you can see in one of the photos below. Not too thick and not too liquidy...

Mix all the ingredients

Once again, no fix ratio here. Just add all the egg with dry ingredients first then slowly at cold water or cold milk bit by bit... until you get the texture you'd like which is not too thick and not too liquidy.

Medium-low heat on a flat surface

A house that I'm staying, there's an electric stove so I just put the baking try on 2 of the stove and bamn, we got like a professional dorayaki flat pan #lol Be careful with the heat, this thing burns so easily so, start with the low-medium heat first and if it's not hot enough, just increase the heat. Some of mine are a bit charred. Not too bad though, Doraemon would still say 'yay'.

Also, normally the dorayaki is not big so if you want it to look original, it's about 10cm.

Fill it up with the sweet red bean paste

Once you got the perfect-looking mini pancake, fill in 2 patties with the sweet red bean paste or whatever you feel like that is.

Tada! Do-ra-e-mon's dorayaki!

I got 2 perfect looking-Doraemon's Dorayaki!!! My 2 friends here love them and they say it's more filling than regular pancakes because of the bean paste filling. Also, if it's still not sweet enough, always, feel free to add some syrup as if it's mayo on a burger patties. That works just fine...
