The next week of talks around the fire is over and it's time to take stock. I will try to be as short as possible

It is pleasant to note that there are more of us around the fire and the conversations have become more lively. This time, six friends shared photos of their smallest mushrooms and exchanged stories and opinions.

These are salted mushrooms that I keep in the refrigerator in an enamel pot under pressure. If you put fresh horseradish leaves on top, you will not get mold on the surface of the pan.

If you add a little aromatic vegetable oil and onions chopped into rings to these mushrooms on a plate ... that's it, I can't go on with the description. I'm choking on saliva :))

Это солёные грибы, которые я храню в холодильнике в эмалированной кастрюле под гнётом. Если вы положите сверху свежие листья хрена, то не получите плесень на поверхности кастрюли.

Если к этим грибам на тарелке добавить немного ароматного растительного масла и нарезанный кольцами репчатый лук... всё, я не могу продолжать описание. Я захлёбываюсь слюной :))

Champignons or other mushrooms. (Take the amount of butter and cheese at your discretion)
50g butter, 100g of Georgian suluguni cheese (you can replace it with mozzarella).Suluguni is usually a salty cheese, so I do not add salt. Put the mushroom caps in the clay plates. Add butter to each mushroom cap. Put the remaining butter in the plate, on the side of the mushrooms. Add grated cheese on top. Bake on low heat for 20 to 30 minutes (depends on your oven). Serve hot in a ketsi. ... sprinkle mushrooms on top with black pepper.

I have seen stuffed mushrooms in this style, you just pick the stem then put some meat/spice filling in the little mushroom bowl then cover it with cheese. If you really want to get decadent you batter the whole combo and deep fry it.

My favorite dish with mushrooms ....🤗
Pie with mushrooms and ready crusts!
It is cooked by frying the onion, or in this case the leek, adding the champignons and cooking a little more. Then the crusts are filled and baked in the oven.... 😁

Suzan, this look very appealing! the onions with mushrooms.... mmmm! I am already salivating. me and my wife have another recipe, including also blue cheese and ordinary gauda cheese, and puff pastry

Mushroom pie ... mmmmm ... it's definitely better than pizza))
Onions always add their own aroma and flavor. I would add freshly ground pepper for a spice. This is not for everybody, he can kill the aroma of mushrooms. Although, if these are champignons from a greenhouse, and not mushrooms from the forest, then maybe it's okay.
I have fresh frozen mushrooms. Gotta try your recipe :)

It is definitely better than pizza 😊

I put curry from the spices, although I like pepper with mushrooms. This curry was a little spicy so it gave a nice aroma. And when the onion is fried a little, you need a lot of oil or whatever you already use for frying .... Water is added to boil it and only then the mushrooms .... And it is poured over with water and oil that are put to boil ...

I have very few fave recipes, mostly they include fried mushrooms and fried potatoes. this certain one also has some serious cheese implementation, too.

a French pie, or 'Quiche' - with champignons, ordinary gauda cheese (original recipe states it should be a mix of more noble cheese sorts) and blue cheese (usually dor-blue or gorgonzolla, or what we can get from the store the cheapest). this is very very very tasty and delicious. my wife rarely cook it nowadays, since the so called 'sanctions' arised the price level for imported sorts of cheese, including the blue cheese. but back in 2000-es, we used to cook a very big dish of this delicacy and have friends sitting by our side, and watch a good movie, accompanying it with this feast of cheese, mushrooms and red wine. those were the days...

For some reason, I haven't tried baking them with cheese. We urgently need to fill this gap. I eat fresh frozen mushrooms and boletus. Which one do you think works best?

Почему-то я не пробовал запекать их с сыром. Надо срочно устранить этот пробел. У меня есть свежезамороженные опята и боровики. Как думаешь, какие подойдут лучше?

best is an enemy of a good.
I can say that champignons work good enough! but good cheese is a must :=) !ENGAGE 10

well, if you have to choose from these, I guess porcini (boroviki) will be a better option.

they are very good, but have a delicate mild flavor. If you want something more pronounced, then you can add to them, for example, mushrooms, red pods or something else wild

Quiche is a good fit for being able to still taste the mushrooms. I turned my lobster mushrooms from last summer into quiche. Sadly my presentation on the quiche looked bad so I didn't take a picture of it. But here's the beast that went into the quiche.

My favorite mushroom dish as an American with a bit of Italian descent is pizza of course lol. Here I grew a lion's mane mushroom from a kit then put it on a pizza between the marinara sauce and the cheese with pepperonis on top. Lion's mane is a bit bland so the marinara really helped with the flavor.

It looks impressive. I have not tried this dish, but I am sure it is very tasty. I make pizza sometimes, but I already forgot when it was the last time. True, I make it easier, together with the mushrooms I put everything from the refrigerator on the dough)))
It's a shame that the topic of mushroom dishes ended last week. It would be a nice decoration for a campfire table. We are now looking for the first spring mushrooms. I think that you will definitely find such.
