Our Nigerian local soup; "Editan soup prepared by me"

Editan is a local dish prepared by the Cross riverians, and people over here in Akwa Ibom and some places in Nigeria.

It is similar to Afang soup soup in the preparation method but slightly different in taste..it is very delicious and healthy especially for the aged women and men.

Editan soup has always been my favorite..
My mum taught me how to make it cause of my love for the soup.

Here are the ingredients used for preparing Editan soup;

  • Editan
  • Crayfish
  • Maggi
  • Pepper
  • Waterleaf
  • Stockfish
  • Onions
  • Perewinkle
  • Palm oil
  • Meat
  • Salt
  • Fish

Procedures;

  • Wash your Editan and waterleaf very well to avoid sand.
  • Slice your Editan leaf and waterleaf.

  • After that is being done, you'll have to wash the Editan leaf cos it's always very bitter.

  • You can wash it with bicarbonate or Alum, though some people wash it the local way and that is without the bicarbonate and Alum.
  • Prepare your meat, fish, Stockfish, perewinkle and stir it well.
  • Add Waterleaf, onions, crayfish, Maggi, salt, pepper turn and cook for 3 minutes, then add Palm oil and cook for 3 minutes.
  • Add your Editan and turn it well, then scoop so it will still be fresh.

After all that, then your Editan soup is ready to be served. It's simple and easy to prepare. Mine was delicious 🤗.

I'm sorry I couldn't snap all the processes, the process of washing the Editan leaf was somehow as I needed to wash it well to remove the bitterness.
