Lunch for the Day

My mom has been making me drink a lot of Kadha lately and even though it's healthy I don't like drinking it a lot. But lunch was a different case today. I came back from work at around 2 PM in the afternoon and my Mom really overdid it today. She cooked some Simple Veg Fried Rice with two side dishes of Paneer. It was simple but at its best and that's always appreciated by me.

For the Veg Fried Rice she just simply half-boiled the rice and them added in some sliced carrots, fried cashews, and some spices. It was so simple but trust me it was delicious.
As for the sides, she made Palak Paneer which is simple in itself as all you gotta do is boiled some Spinach and then blend it to a fine paste with some tomatoes and chilies. Once the paste is made fry it off on a Kadhai and add in paneer Cubes. Palak Paneer is done.

The next one is also a paneer dish but truth be told I don't know how my mom made it as it tasted like a lot of different spices were added to make a delicate balance to the taste. But you can look at the above picture and guess how it tasted.
