Support Your Locals and Have an Awesome Dinner 🐟 #DashOutSunday

This Sunday's meal was all about supporting local small business and hustles.
Just about half of my freezer is filled with locally caught shrimp and fish. I bought all of them 2 months ago at a nearby family fishery shop and stuffed the freezer full in anticipation of a second wave and or a full lockdown, alongside eventual paper cash shortages at the ATM withdrawal machines which was becoming a problem back then. So now we have an abundance of different types of cut pieces and filets to pick from.

We also recently discovered a local small farm family some meters away. They just put up a small stand in front of their house and sell all kinds of home grown vegetable. This comes in handy, as we don't have to travel far, and they're cheaper than standard market prices. Also, even though I didn't grow something myself, I can still support the practice of homegrown food this way. So we got a few eggplants from them and went on our way.

Dash Out!

Another local thing we got where white sweet potatoes.
Hooray, no rice again for me. :)
We got those from @tanjakolader her mom who got them from a local as well. Those where just cooked in boiling water with a little bit of salt and set aside for later.

I decided to go the Asian route with the eggplant. Sliced them in diagonal slices and started of by browning them on both sides in a pan. After that I heated up some oil, browned garlic in that and tossed in the eggplants along with minced ginger. Topped it of with some sesame oil, soy sauce and oyster sauce and that was ready to go.

Last but not least it was time for the fish. Locally we call it 'wit-witie' which translate to whitefish. Co-chef @tanjakolader was uncertain of what ingredients to use, because I'm usually the one that does the marinades. But I told her to surprise me, and the result was delicious! She used garlic, a of that locally made pepper powder, black pepper, salt and lemon juice from those lemons we got from our friend last week.

Time to fry them in the same pan we used to brown the eggplant. After that the feast was complete. Well, that and Tanja cooking her beloved rice.

In times when the economy sucks, we are encouraged to plant vegetables at home and do some mini scale farming. But even if that's not completely possible, the message to take out of this is to support your locals whenever possible. If they deliver quality, service and consistency, they are worth your time and money.

If we give kindness to the universe, the universe will eventually give it back to us.
Your mother was right indeed! :)

Lol, it has some pretty weird names all around.
But between "Boulanger" (pronounced: boo-lahn-sjay) locally, Aubergine to a good part of the world and Eggplant, Eggplant is definitely the one that makes the least sense. 😅

@JustinParke here on behalf of the ReggaeJAHM Community.

A team is always best in the kitchen, and you two prove that to be true every week. We support local farmers when we can, but we also steal from locals that leave fruit to fall to the ground. I think you two would love Cambodia, one of the world's largest freshwater lakes and an ocean too, so needless to say, fish and seafood are a big part of the Cambodian diet.

Thank you @justinparke. One of the big deciding factors of our plans to travel through South-East Asia is actually the fact that seafood is easily accessible there and therefore not as expensive.

Our team is only good in the kitchen when no one meddles with the others dish. 😅

Yeah, true. It depends all on how large the country itself is. Here the local business and cities are not far from each other.

I hope it works out. For now you can maybe start practicing gardening with small pots and herbs or something.
