Hoy quiero compartir con ustedes mi receta de sopa de res, este corte de la carne ternera se le conoce popularmente como lagarto, aunque en otros países se le conoce como Osobuco.

Esta sopa reúne los sabores de la carne, verduras y especies, y se puede servir como plato principal, ya que es altamente proteica.

Today I want to share with you my recipe for beef soup, this cut of beef is popularly known as a lizard, although in other countries it is known as Osobuco.

This soup brings together the flavors of meat, vegetables and spices, and can be served as a main dish, since it is highly proteinic.

Ingredientes:

4 trozos de carne de res o lagarto.
2 litros de agua hervida
Sal
Cubito de condimento.
Aceite con Onoto
Vinagre
Calabaza
Yuca
Batata
Chino
Ocumo
Cebollín
Cebolla
Perejil
Apio
Ají
Ajo
Orégano.

Ingredients:

4 pieces of beef or lizard.
2 liters of boiled water
Salt
Seasoning cube.
Oil with Onoto
Vinegar
pumpkin
Yucca
Sweet potato
Chinese
Ocumo
Chives
Onion
Parsley
Celery
Chili pepper
Garlic
Oregano.

Preparación:

Paso 1: Luego de lavar los trozos de carne, se coloca en una olla, se agrega la sal, los dientes de ajo cortado en trocitos pequeños, se agrega el aceite con onoto y unas gotas de vinagre para aderezar la carne. Se tapa la olla y se sofríe la carne mientras se preparan los vegetales para agregarlos.

Paso 2: Los vegetales se cortan en trozos, luego se agrega el cebollín, cebolla, perejil, apio, aji; y se agrega los dos litros de agua, se deja hervir durante 30 minutos o hasta que la carne este blanda.

Paso 3: Luego de comprobar que la carne este blanda, se le agrega los trozos de calabaza, yuca, batata, chino y ocumo. Se deja hervir por otros 20 minutos para lograr la cocción de estas verduras.

Paso 4: Se le agrega sal al gusto y un cubito de condimento, para fortalecer el sabor.

Paso 5: Servir la sopa de res.

Preparation:

Step 1: After washing the pieces of meat, put them in a pot, add the salt, the garlic cloves cut into small pieces, add the oil with onoto and a few drops of vinegar to dress the meat. Cover the pot and fry the meat while preparing the vegetables to add them.

Step 2: The vegetables are cut into pieces, then the chives, onion, parsley, celery, chili are added; and add the two liters of water, let it boil for 30 minutes or until the meat is tender.

Step 3: After checking that the meat is tender, add the pieces of auyama, yucca, sweet potato, Chinese and ocumo. Let it boil for another 20 minutes to cook these vegetables.

Step 4: Add salt to taste and a cube of seasoning, to strengthen the flavor.

Step 5: Serve the beef soup.


La sopa de carne de res, es una de mis favoritas, y aunque cada quien tiene su estilo y receta, este es mi humilde receta. En ocasiones le agrego zanahoria y papa, sólo por complacer a mi hija Adriana.

Beef soup is one of my favorites, and although everyone has their own style and recipe, this is my humble recipe. Sometimes I add carrot and potato, just to please my daughter Adriana.
