[Kekappa Special] - Steamed sweetened coconut

The @bdcommunity @azircon and the BD boys hold a special place in my heart. I am really happy to see that they accepted my suggestion to conduct a cooking contest. I hope there are many participants.

I really love sweets but unfortunately, I am a diabetic. I do try to eat a bit now and then to satisfy my cravings, though.

I am posting a sweet that is made in Kerala, especially during the festival of Onam, and also it is a staple snack as well owing to its 'healthy' nature.

I do hope you will try it out since the ingredients are easily available and are also quite easy to prepare too. If you have a passion, nothing is difficult.

This is a fun entry and not meant to participate in the contest.

Ingredients

  • coconut - a cup or so
  • soaked rice - 3/4 glass
  • jaggery - as required
  • cardamom - two pods
  • banana leaf - 6 or 7
  • water
  • salt - a pinch

Method

Step 1 - Soak the rice in water for a few hours.

Step 2 - Shred the coconut.

Step 3 - Grind the rice to a fine paste.

Step 4 - Mix shredded jaggery with the coconut and add powdered cardamom to it and mix well.

Step 5 - Tear the banana leaves in square shape. Heat the banana leaves over a small flame just so that it bends easily without tearing.

Step 6 - Pour rice batter in the shape of a small moon and put a spoon or two of the coconut - jaggery mix and fold neatly.

Step 7 - Heat water in a steamer.

Step 8 - Place the folded banana leaves carefully and cook.

Step 9 - Cook the sweet for about 25 minutes or until it comes off easily from the leaf.

Let it cool for some time. I am sure you will enjoy the sweet dish and cannot resist eating another one.

Tip

In case you do not have jaggery in hand, you can use sugar or even syrup and in case you do not have coconut, you can use rice flakes and sugar. You can also use curry too if you do not feel like eating a sweet but since this is a sweet dish, it would be better to prepare a sweet filling.

Note - This sweet is known as Ela ada in the Malayalam language, where ela is leaf and ada is sweet.

I love everything who is cooked with banana leaf, it give a special taste to the food..
