Dragon’s Milk Banana Muffins

So I’ve been consuming a fair amount of alcohol during this quarantine. I said to my self why just drink it? So now I’m eating my alcohol! I have a fairly large beer cellar. I age high ABV stouts mostly. My collection has some bottles that are 5 plus years old. Since I’m not able to get out and bit new beer due to the current pandemic. I’m starting to break into the good stuff.

The idea of making muffins with beer kind of came from necessity. We had some bananas that were about to go bad so they needed to be used. I was joking saying we should add some banana beer and my wife was like yeah we should.

I thought she she was kidding for a sec, but she said they she could use it. So I ran down the cellar and grabbed and bottle of 2018 banana coconut Dragon’s Milk.

The muffins used a standard recipe with the addition of the beer. Let me tell you it took like ten minutes to make the batter and only a few more to cool them. It was so simple! The muffins were delicious. The beer added a complex malt and coconut flavor. This paired with the banana and chocolate chips. The beer itself has a nice chocolate flavor and that gave a nice dark coco hit to cut the milk chocolate chip sweetness.

I highly recommend cooking with beer. It’s not something that I think about, but we are going to be experimenting with some more recipes.
