Grilled Balsamic Zucchini, Chicken, and Pasta
Last night, my youngest asked for some Grilled Balsamic Zucchini. She's been a little sick for a few days, so hearing that she was hungry, was a FANTASTIC thing.
Below First, I sliced off the top caps and bottom ends. then, I sliced lengthwise, into about 1/4 inch (4 mm) thick slices. I drizzled with Olive Oil, and seasoned with Grated Fresh Parmesan Cheese, and Pink Himalayan Sea Salt.
Above High Heat and constantly monitor, once it is seared, flip it, and grille it both sides.
Below really nicely seared, place it on a serving plate, and drizzle with a Balsamic Vinegar. Mine was an amazing gift from @biggerjoe. It's our family's favorite Balsamic EVER!
In Addition to the grilled Zucchini, I served a wide egg noodle pasta, the grilled Chicken, and a bowl of White Cherry Tomato.

Oh wow, this is exactly the post I needed to read. I have the world's biggest zucchini from my garden and I was trying to figure out what to do with it - bake, fry, spiralize?? I'm going to try this recipe!
