In Venezuela, chupe de pollo is a tradition of Andean families, a simple and inexpensive broth, but full of flavor.
This is my version I learned to make watching it at the home of some Andean people or as they call it here... "Gochos " in caracas and I've modified it over time.

I recommend you to try it at home at least once, I'm sure you'll love it, as I said before, food has the property of healing us, and chupe is no exception, it lifts the spirits of anyone, and helps you with any flu.

The perfect broth, in times of Pandemics.


Which is why I decided to make this recipe for this week's #hivetopchef!

Ingredients

  • ½ whole chicken breast without skin
  • 1 medium carrot
  • 1 bunch of fresh coriander
  • 4 tablespoons of olive oil
  • 3 cloves of garlic
  • 1 medium onion
  • ½ leek stem (optional)
  • ½ paprika (pepper)
  • 1 cup of frozen corn or canned corn
  • 2 medium potatoes
  • ½ small broccoli
  • 2 tablespoons of cheese cream or milk cream
  • salt and black pepper to taste.

    Para acompañar:
  • fresh coriander
  • Fresh white cheese
  • Cream cheese or milk cream
  • 1 avocado in cubes.

Preparation:

Place the chicken in a pot and add water to cover it with ½ onion and ½ chili and let it cook covered over medium heat until the breast meat is soft.

Take the chicken out of the broth and remove it and set it aside.

Add the carrot in pieces and the leek, in my case I didn't have any, so I just left it with the onion I already had, removing the chili, so it wouldn't be too spicy.

Add the broccoli and potatoes in small pieces.

While they soften, put a pan with olive oil, onion, garlic and paprika cut in brunoise, salt and pepper to your liking (in that order); until they release their juices, and reserve.

Returning to the broth...
Return the fried and shredded chicken.

Add the cream cheese, corn and coriander.

You can add crushed soda crackers, to give it body.

En Venezuela, el chupe de pollo es tradición de las familias andinas, un caldo sencillo y económico, pero lleno de sabor.
Esta es mi versión la aprendí a hacer viendo en casa de unos andinos o como le dicen aqui... "Unos Gochos" en caracas y la he modificado con el pasar del tiempo.

Les recomiendo intenten hacerla en casa al menos una vez, seguro les encantara, como ya he dicho antes, la comida tiene la propiedad de sanarnos, y el chupe no es la excepción, le levanta el ánimo a cualquiera, y te ayuda con de cualquier gripe.

El caldo perfecto, en tiempos de Pandemias.

Razón por la que decidí hacer esta receta para concursar esta semana en el #hivetopchef!

Ingredientes

  • ½ pechuga de pollo completa sin piel
  • 1 zanahoria mediana
  • 1 manojo de cilantro fresco
  • 4 cucharadas de aceite de oliva
  • 3 dientes de ajo
  • 1 cebolla mediana
  • ½ tallo de puerro (opcional)
  • ½ pimentón (pimiento)
  • 1 taza de maíz congelado o maíz en lata
  • 2 papas medianas
  • ½ brocoli pequeño
  • 2 cucharadas de queso crema o nata
  • sal y pimienta negra al gusto.

    Para acompañar:
  • cilantro fresco fresco
  • queso blanco fresco
  • queso crema o nata
  • 1 aguacate en cuadritos.

Preparación:

En una olla coloca el pollo y añade agua hasta cubrirla junto a ½ cebolla y ½ aji y lo dejas cocinar tapado a fuego medio hasta que la carne de la pechuga esté suave.

Saca el pollo del caldo y desméchalo y reserva.

Agrega la zanahoria en trozos y el puerro, en mi caso no tenia, así que solo la deje con la cebolla que ya tenia, retirando el ají, para que no quedara muy picante.

Agrega El brocoli y las papas en trozos pequeños.

Mientras ablandan, se pone una sartén con aceite de oliva, la cebolla, el ajo y el pimentón cortados en brunoise, sal y pimienta a tu gusto (en ese orden); hasta que suelten sus jugos, y reservas.

Regresando al caldo...
Devuelve el sofrito y el pollo ya desmechado.

Añade el queso crema, el maíz y el cilantro.

Puedes agregrar galletas de soda trituradas, para darle cuerpo.

Uffff, esto se ve glorioso, Irene! Me encanta el mise en place hexagonal, me recuerda a los chakras, jajaja. Un caldito como este luego de una buena pinta de yopo debe ser una maravilla.
