A Colorful Salad

It is very, very rare in our place to have red beets, because it doesn't grow here in the tropics, except in the cooler part of the country. But fortunately, my husband found TWO small pieces of it. It is expensive than the other vegetables available here, but who cares? It's RED BEETS!

So, because of red beets my salad is way too colorful today then usual. And I love it!

My salad is made of red beets, turnip, avocado, mango, and lettuce--that gives red, white, green, and yellow colors! Then I add a pinch of permasan cheese on top. And it's ready!

Thank you so much for joining us again! Such a lovely bowl full of color! I take beets for granted sometimes as they grow really well here. We can get them for the majority of the year, so I don't often think about them being exotic but it makes sense in a tropical environment! So much fun to see what is mundane here is rare elsewhere, and vice versa. I love the golden beets, as well, but the red ones are just too pretty and full of wonderful nutrients!

I only have one little tip for #fruitsandveggiesmonday dairy (cheese) is not vegan, so unless the parmesan was a vegan version it is not a valid ingredient for the challenge. The rest of your post is lovely, though, so keep up the wonderful work! :)

No worries my friend! It happens often, so we just use it as a good educating experience. There are a few things that people tend to forget about, but once we point it out it is an easy one to avoid in future entries. :)

Your salad looks delicious with all the fruit and vegetables!

I have two rows of red beets growing this year and I am looking forward to when they are read. I did not grow any for a couple of years so this years crop will be that much better. I usually take some of the greens for my salads, but this year do not want to interfere with the roots growing.

I store in a cool place as much of the beet roots as I can.

Aw, that's so cool having beet roots! 😍 It only grows in cooler places, so we cannot plant it here. We also have vegetable garden in our yard, but we only grow tropical crops. 😊😊

Oo nga eh! Galing yata diyan ang nakapuslit dito sa amin. Hahaha! 😁 Baka masyado nang marami ang supply diyan kaya nakarating dito. Hehe! Mabuti nalang. Pero two pieces lang ang nakita namin dito, kaya pang-salad lang talaga, wala nang pang-juice. Hehehe! 😊😊 Sana magkaroon pa ng maraming supply para makapag-juice din kami.

Ahhh, may season-season din pala ang red beets? Akala ko wala. May nakapagsabi kasi doon sa post ko na it grows a year round daw. Pero baka sa kanila lang yon. Iba naman kasi ang weather dito sa atin eh. Hehe. 😁
