Traffic Light Veggies

That was how the little one called it when he came to the kitchen to peek what was I cooking. But really, this was once a week must-cook...

Mixed Vegetables

Usually, I would add more varieties of vegetables and make it a rainbow dish, but I only had these three; carrot, pumpkin and broccoli. If the carrot was red in colour, my son would be correct to name it traffic light veggies, but then again, people do call carrot as red carrot. No? So is carrot red or orange? Once, my friend was confused and insisted carrots were red colour based on the name 'red carrot' and the rest was history.

Let's not chase another rabbit who is chasing the red carrot, but back to this traffic light veggies. Again, at the end of the week, I loved to pop in my head into fridge to check what was left. And these 3 musketeers were there waiting to be stir fry, together with all other ingredients.

Ingredients:

  1. Onions and garlic
  2. Carrots
  3. Pumpkin
  4. Broccoli
  5. Sliced meat (optional)

Seasonings:

  1. Salt
  2. Pepper
  3. Soy sauce (optional)

Cut accordingly to desired size and shapes

Steps

With some heated oil, sautéed the slices of meat till no longer pinkish, sprinkle a dash of salt and pepper, followed by 1 tablespoon of soy sauce. Mixed them all and scooped out into a plate.

Sautéed the onions and garlic until fragrant in one tablespoon of vegetable oil, followed by adding in tje carrots as they took longer time to soften than pumpkin and broccoli

After around 3 minutes of sautéeing the carrots, add in the broccoli, stir fry for another 3minutes before adding in the pumpkin.

Lastly, add in the pre-cooked slices of meat and mixed together with all the veggies, adding a bit of water and let them cook together for few minutes. Seasoned with salt and pepper if needed.

And the dish is ready! Best eat with a bowl of warm brown rice.

Those related to pumpkin flowers and the inbetween flower and pumpkin fruit.
It's delicious..

Back home, we only eat the pumpkin fruit but here in Vietnam, there's other part of the pumpkin that can be eaten and taste absolutely amazing !

That looks good! Oh how I wish my boys would eat vegetables. I might need to make that for myself though. I never really thought of stir frying pumpkin before!
