DEVILED SOY / Soya endiablada [ESP/ENG]


En mi post anterior explicaba cómo hacer leche de soya, ahora, con los residuos, haremos una receta que llamaremos Soya Endiablada, porque tanto la textura como el sabor recuerda al jamón endiablado. Una receta fácil, muy rica y que puede servir para comer así como queda o para hacer mojito con tomate, para añadir a los huevos revueltos, etc.

In my previous post I explained how to make soy milk, now, with the leftovers, we will make a recipe that we will call Deviled Soy because both the texture and the flavor reminded us of deviled ham. An easy recipe, very tasty and that can be eaten as it is or to make a sauce with tomato, to add to scrambled eggs, and so on.

Necesitaremos

El residuo que queda al colar la leche de soya
Cebolla, Ajo, Ají, Jengibre, Pimentón, Ralladura de limón, Aceite, Sal, Mostaza, Pimienta, Paprika, Comino y Orégano.

Haremos un Mice en place con todos los ingredientes los picaremos en cubitos lo más pequeño posible, salvo el jengibre que lo rallaremos. Tendremos todo listo antes de poner la sartén al fuego.

We will need

The residue left over from straining the soy milk
Onion, Garlic, Chili, Ginger, Paprika, Lemon zest, Oil, Salt, Mustard, Pepper, Paprika, Cumin, and Oregano.

We will make a Mice en place with all the ingredients we will chop them in cubes as small as possible, except the ginger that we will grate it. We will have everything ready before putting the pan on the fire.

Sofreiremos primero la soya con media cucharadita de sal, para que tome un color ligeramente dorado y se evapore el exceso de agua que le quede. La apartamos a un lado en el mismo sartén para que siga evaporando y colocamos más aceite, allí freiremos el resto de los ingredienes, primero la cebolla hasta que dore y después agregamos el resto, dejando las especias para el final.

Dejamos freír unos cinco minutos y sazonamos. Usaremos tantas especias como queramos, las que aporten más sabor y un toque de picante, ese es el secreto para el sabor final, que recuerda al del los diablitos underwood

We will sauté first the soybean with half a teaspoon of salt so that it takes a slightly golden color and the excess of water that remains evaporates. We put it aside in the same frying pan so that it continues evaporating and we put more oil, there we will fry the rest of the ingredients, first the onion until it browns, and then we add the rest, leaving the spices for the end.

Let it fry for about five minutes and season. We will use as many spices as we want, the ones that provide the most flavor and a touch of spiciness, that is the secret to the final flavor, reminiscent of the Deviled Ham UnderWood

¿Por qué esos ingredientes? Algo que ayuda mucho a la hora de improvisar en la cocina es conocer los ingredientes. Esta receta la hice porque mi mamá me dio a probar la soya con huevo revuelto y me pareció que sabría a diablitos si tuviera cierto picante y acidez, pero no es carne, no recibe los sabores del mismo modo ¿Qué mezcla hacer para mantenerlo completamente vegetal?
El jengibre y la ralladura de limón tienen sabores fuertes que se deben usar en poca cantidad para no opacar al resto, pero que enmascaran el sabor amargo del grano de la soya. No todo el mundo siente este sabor amargo igual, pero la frescura del jengigre y el limón lo soluciona.

Why these ingredients? Something that helps a lot when improvising in the kitchen is to know the ingredients. I made this recipe because my mom gave me a taste of soy with scrambled egg and I thought it would taste like devils if it had some spice and acidity, but it's not meat, it doesn't get the flavors in the same way. What mix to keep it completely vegetable?
The ginger and lemon zest have strong flavors that should be used sparingly so as not to overshadow the rest, but they mask the bitter taste of the soybean. Not everyone feels this bitter taste in the same way, but the freshness of the ginger and the lemon will solve it.

Yo lo mantengo en un envase con tapa y lo uso para lo mismo que usaría un jamón endiablado. Como tip, pueden añadir aceite de oliva sazonado con ajo para que se mantenga más hidratado y suave.

I keep it in a container with a lid and use it for the same thing I would use a deviled ham. As a tip, you can add olive oil seasoned with garlic to keep it more moisturized and soft.

Aquí muchos se volvieron locos cuando llegaba en la bolsa porque no sabían que hacer con eso, ahora yo aprovecho de inventar recetas jaja
