Combro Tempeh

I have lots of favorite childhood snacks, from when I was a child, teenager to when I was still in college. When I was little, I really liked the food my mother made such as klepon, nagasari and various kinds of food made from a mixture of coconut milk and palm sugar, until when I was in college, I liked a food that I ate almost every day.

So, there was a small trader, a very tough woman, selling her wares around my campus. I remember her name was Nurul, a middle-aged woman who was very active in selling her wares by carrying a plastic box filled with fried foods such as; bakwan, combro, risol and tofu. He often sells in my favorite area, the library.

I really like being in the library because there are lots of things I can do there, like using free wifi so I can save money and downloading some of my favorite videos and movies for me to watch at home. Every 1.00 pm, Nurul is always approached by many students who want to buy her wares. I admit, that the fried food that Nurul sells is very good, unlike the fried food from other traders.

My favorite snack that Nurul sells is combro, a snack that I always buy when I'm at the library, I always buy 5 piece combro for me to eat alone, it's enough to fill me up in the afternoon. I even got to know Nurul closely, she is so strong as a woman who helps her family's economy. After graduation, I met Nurul and said goodbye because I had to go back to my hometown, which might be very difficult for me to return to Padang.

Before leaving, Nurul gave me lots of secret recipes for making combro, she said I should be able to make combro like her, so I wouldn't miss the combro she made. Sure enough, Nurul gave me lots of tips and tricks for making combro, I remember very well she gave me a piece of paper filled with her writing and also 1 plastic full of combro.

It's been almost 7 years, I remember very clearly the recipe that Nurul gave me, I've made combro many times to serve as a snack. For those who don't know what combro is, this snack is made from cassava filled with ebi and spices with a slightly spicy and savory taste.

Since I want to make a plant-based snack, I will replace the combro filling with a plant-based high-protein ingredient, which will be no less tasty than ebi, because I will use the right recipe. Intrigued by the recipe? Come on, see the following recipe!


Combro Tempeh
The Recipe


To make combro tempeh, there are several ingredients that will be used, apart from that, always follow step by step in making combro tempeh, use quality ingredients, Hivers!


Ingredients;

  • 250 grams of cassava
  • 200 gr of tempeh
  • 100 gr of grated coconut
  • 4 cloves of shallots and 4 cloves of garlic
  • Coriander and pepper powder
  • 20 gr red chili and 10 gr cayenne pepper
  • 1 kencur segment
  • Lime leaves
  • 2 Leeks sticks
  • The oil for frying

How to make combro tempeh;

  • Puree the tempeh using a chopper or fork, then grind the spices; shallots, garlic, red chilies, cayenne pepper and kencur. Heat some oil for sautéing the spices.

  • Sauté the spices until they release an aromatic fragrance, then add the mashed lime leaves and tempeh. Add mushroom stock, sugar and salt. Add the thinly sliced onions. Sauté until cooked and set aside.

  • Peel the cassava from its skin, then grate the cassava using a traditional grater, you can also use a chopper but don't make it too fine. Squeeze the cassava out of the water, don't make it too dry (try to keep it slightly damp).

  • Mix cassava with grated coconut, coriander, sugar and salt. Add a little tempeh filling and mix with the mixture until smooth.

  • Take a spoonful of dough then fill it with tempeh filling, shape as desired.

  • Heat the oil over the wokpan, deep fry the combro, fry until slightly browned. Remove and drain from the oil.

  • Combro tempeh is ready to be served!

Wow, it's such a great recipe. I think I want to try this but unfortunately, I am afraid to use cassava for the reasons that I may not use or cook it properly and it may cause us a problem instead (knock on the wood) but will see if maybe I can substitute other ingredients for it.😃
