How to prepare Ayang Ekpang; A delicacy gotten from Cassava (Manihot esculenta).

Hi good evening lovers of good food.

So this will be my first time posting in this community. Take this as a little expose on cassava and the numerous extract gotten from it.

In Nigeria Cassava serves as so many things to us especially those of us living in the southern past of Nigeria.
In my state we use cassava for so many of our food ranging from Fufu(pounded casava), Tapioca, casava flour, cassava flakes etc.

Today i will be taking you on a journey of how to prepare one of most loved food or delicacy gotten from casava, it is called Ayang Ekpang in my dialect meaning casava prepared by using Plantain leaf☺️😁

Now this is the procedure.

Firstly harvest your cassava, peel it, wash it and grate it using a grater 👇👇

After that leave it for a while, go get your plantain leaf, after cutting the plantain leaf wash it or should I say rinse it, set fire with your firewood , then take the plantain leaf close to the fire, put the plantain leaf across the fire to make it heat the leaf.

Note:- You are to hold the leaf across the fire, turning it from time to time, the essence is to heat up the leaf to kill germs from it (although you've washed it already) and to make it easy to fold, because the very fresh plantain leafs will not be easy to bend. 👇👇

After heating the leafs detach it from the stalk, then cut the leafs into desirable sizes, get the pot you want to use wash it clean then lay the stalk detached from the leaf neatly in the pot 👇👇👇

The stalk helps the leaf and it content not to get burned when it is being heated up.

After laying the stalk neatly in the pot , you then pick up one slice of the leaf pack the quantity of cassava depending on the size of leaf, roll it up and fold the both ends of the leaf and put it in the pot, you do this till the cassava is being used up totally. 👇 👇

After doing this, keep the pot and it content on the fire, allow it to steam for sometime then you add water to the content, the water will pass the content of the pot a little then allow it to heat up till it's done 👇👇👇

And boom your casava is ready to be served.
This delicacy is used in eating soup, especially editan soup prepared with editan leaf aka Lasianthera africana

It's been a while I ate Ayang Ekpang.
This is a wonderful recipe. I enjoy it with vegetable soup.
