Young coconut and carrots juice

I just always wanted to try making something I saw on videos or I have read from blogs when it comes to juices or food as long as the ingredients are available in our place. It is good to learn something from others and apply it on our own.

One day my husband brought one young coconut for us. My son is so excited to let his father open it because he wanted to drink the coconut water and eat it's meat. But I told him to wait for tomorrow because I will buy carrots first and we will try a carrot and coconut water juice. I got this idea from @anggreklestari post about her sweet sunset but we don't have celery so I will just try the coconut water and carrot juice.

INGREDIENTS

1 young coconut
3 small carrots

PROCEDURE

Step 1. I first wash, peel and then slice the carrots big enough to blend it easily. Set aside.

Carrots is one of our favorite ingredient for healthy juices because I like it's benefits.

The benefits of carrots can be attributed to their vitamins, antioxidants, minerals, beta-carotene, and fiber. Carrots can promote eye, skin, hair, bone, and oral health. They also can reduce the risk of cancer, aid in weight loss, regulate blood pressure, boost immunity, and lower cholesterol levels. Source

Step 2. Using bolo (a large single edged knife) I open the young coconut. I tried many times before I was able to open it. I need to removed green coconut shell, followed by the white fiber layer and the last is the hard coconut shell.

Then I was able to remove the young coconut water.

Young coconut water is naturally sweet and refreshing especially when taken fresh directly from the coconut tree.

My husband then break it into two so we could get the young coconut meat.

Step 3. Put the sliced carrots in the blender and then add the young coconut juice. Blend it well.

Step 4. The young coconut water and carrot juice is now ready to serve.

I put the juice in three glasses I prepared specifically for me, my husband and my son. When I taste it, I didn't like the taste that much. I can smell and taste more the carrots than the young coconut water. I then realized that I put more carrots in it.

Tips: Just put a little carrots when combining with young coconut water. One small carrot is enough with one young coconut.

Step 5. The experiment doesn't end there. I put the juices back to the blender again and I put all the young coconut meat and blend it again.

It makes the juice creamy because of the young coconut meat. It tastes better for me. It might not that delicious for you as the taste of carrots dominates the juice. My husband suggests to put honey or any sweetener but I prefer not to add any. I prefer the pure young coconut meat, juice and carrots. If you noticed, I didn't strain it because I also want to drink the tiny fiber of carrots as it helps aid digestion.

This is our young coconut meat, young coconut water and carrots juice.

In preparing juices for the family we really prepare according to our taste, according to our preferences, according to what we need and according to what is available.

I'm happy that me, my husband and my son like and consume the juice. It is like we ate the fresh and raw carrots in other way.

Hahaha that's my mistake in this experiment or try @tpkidkai, naparami ang carrots, mahilig din kasi talaga Ako sa carrots hehehe kaya ayon nangibabaw ang amoy at lasa ng carrots hehehe.

Wala na ring ice, kasi Wala kaming refrigerator hahaha tamad na din bumili sa tindahan kaya ayon pure lang talaga.

I would like to try this to know how carrot will taste in coconut water. But merely looking at the coconut it look unmature and I think it will be more easier to blend the coconut meat too. I think that will taste more different than the mixture of water and carrots alone.

You're right the coconut is unmature because I use the young coconut and it's meat is still soft. The meat of young coconut can be eaten directly too and it is so delicious.

If you will try this combination, only out a little amount of carrots. One carrot is enough for one young coconut.

Yes @anggreklestari this is the better and healthier option, no sugar and the pulp is still there.

The pulp really helps the digestion, am I right?

I know this combination and process might not passed or not okay to many because they might not like the taste but as a mother I know this is the best for my son and for my family. Glad they drink it too.

I trained my son into healthy foods as long as I can still handle him. When he grows old he would have his own choices but I wish he would still choose what is healthier.

This is my first time too. This is an experiment, a try. If you would try this, limit the amount of carrots. You can use one small carrot into one young coconut.
