La crema de berenjena es ideal para untar, panes, galletas casabitos; sirve para compartir en reuniones, y es una delicia para el paladar.

Ingredientes:
1 Berenjena grande
2 Cucharadas aceite de oliva
2 cucharadas de vinagre de vino
1 cucharada de mostaza
1/2 cebolla
5 Dientes Ajo
Sal al gusto

Lavar y secar la berenjena, luego colocarla al fuego directo de la cocina, la dejamos quemar volteándola con pinza o tenedor, hasta que esté toda la piel quemada.

Paso 2
En un envase aparte, se mezcla el aceite, vinagre y mostaza, con la cebolla finamente picada en cubitos pequeños y el ajo bien triturado.

Paso 3
Bajamos del fuego la berenjena con ayuda de una pinza o tenedor, y con un cuchillo fino se retira la piel quemada, dejando algunos pedacitos para aumentar sabor, ahumado. También se puede ayudar de una cuchara para sacar la carne de la berenjena y dejar la piel aparte.

Paso 4
Se mezcla la berenjena con la vinagreta del paso 2, con ayuda de un tenedor se va triturando para que no queden pedazos grandes. En algunos casos, se usa una licuadora para que todo quede bien triturado, pero en mi caso me gusta sentir los pedazos del ajo, cebolla y algunos de la berenjena en la boca.

Se sirve bien sea con galleta de soda o con casabe, y podemos llevarla para compartir, tenerla en casa en casos de querer merendar algo diferente y salado o incluso agregar a una rica pasta.
